Beautifully demonstrated. If I wanted to have one big souffle rather than individual ones, would it be possible? What volume souffle dish would work best, and what adjustment should be made to cooking times?
Thanks so much for watching! Christophe actually recommends that you don’t bake this soufflé recipe in any dish larger than 4” wide. It will struggle to rise, and small ones are a bit easier.

one quick question! you let the chocolate pastry cream cool completely or just left it aside until the meringue is done?
It doesn’t have to be completely cold actually, leave it on the side while you are making the meringue. Room temp is good .

Because we want to be as accurate as possible when it comes to pastry , I will recommend to invest on a scale .
If you don't have cream of tartar could you use something else?
Good question , you can omit but your egg white will be more fragile. So it might not rise as much .
