It looks like you cut the bar tape on the wrong side when making it taper, leaving a big visible section of foam visible. If you cut the other side of the bar tape, towards the stem, you'd see the thinner edge of the bar tape exposed instead. Nice paint job, though.
this video ends at the 0:59 mark. after the washing it was already as new; i skipped to the end to see the result, this is not a restoration it’s just a change of handlebars. the original bike was fully functional and not in need for restoration. kudos to the great work you do, but “restoration” is a misnomer in most of the titles you use.

Two questions how did you get the v brakes to work with road brake levers and what brake levers are you using

This is a typical paint remover. I am not sure about the ingredients.
