Thought on a variation of the minigame but with Sonic. He can´t attack the Snakes and the timer lasts one to two minutes. If they get the hedgehog before the time expires they win
To balance the game with a human, you'll need to restrict the dinosaur's move pool. (Grab Only, Smash Attacks only, etc.) Either that or give all the hunters 2-3 lives.
A fun one for Ult/Smash4 is "Bear, Man, Gun" 3 way stock battle. One player plays Donkey Kong, One player plays Ike, and One player plays Little mac. Last player standing wins.

it's gonna get unranked at some point, with rollback. Could be in two years or five years but it's in active development
