Creamy Cucumber Salad

- The perfect summer salad recipe! Easy to make and a total win.
Ingredients
3 large English Cucumbers sliced thin
1/2 small red onion sliced thin
Dressing
1/4 cup fresh dill plus more for serving
1/2 cup sour cream
1/4 cup mayonnaise
2 tablespoons vinegar
1/2 tablespoon lemon juice
1 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a small bowl, whisk together the sour cream, mayonnaise, dill, vinegar, lemon juice, salt, and peper. Set aside.
Add the sliced cucumbers and red onion to a large bowl. Toss with the dressing, and garnish with more fresh dill.
While you can serve this salad right away, I think it is best after refrigerating for 1 to 2 hours. I do not recommend making this salad ahead of time.

Pro tips:
1. Slice your cucumbers a day before in the am, heavily salt them and set them in fridge for 6-8hrs to drain the natural liquid off. Or the mixture will be watery.
2. Mix the dressing: Sour Cream, Mayo, onion, dill and set that aside while the salted cucumbers drain. Then later in evening just before bed- strain the cucumbers and mix them in the dressing, cover and they will be ready for the next day.
3. This recipe is amazing with out the vinegar and lemon.
4. 8-10 cucumbers will need 16oz of sour cream and 1 1/2 cup Mayo and 7 dill sprigs.
5. We prefer using green onions. We cut the entire onion in half length wise all the way down and then cut them thinly all the way down and use the entire green onion. For we use 1 green onion per 3 cucumbers.
Way too much salt!
