The correct sentence is "I hadn't known this grammar until I saw this video."

What happens if you have 3 actions out of which 2 had happened before the 3rd one, at the exact time? Which one is written in Past Perfect?

The first action is written in the past perfect. The second action can be written in either the past perfect or simple past depending on how much time has passed between the actions. If the actions occur at a similar time, you should use the same tense.
