Let me show you how I make my family’s recipe for MOLE POBLANO now let me tell you this dish is truly iconic in Mexican cuisine, and it’s important for everyone to know how to make it from scratch I have shared my grandmas shortcut recipe, but this one here is the original recipe and yes it’s many ingredients but that’s how many the authentic mole recipe MUST have! I promise you, 80% of the ingredients you already have them in your pantry ☺️ so don’t get discouraged, give this recipe a try at least once a year, for that special occasion, it’s seriously worth it! ** this Mole is sweet and spicy if you don’t want yours to come out spicy simply substitute NM chile pods for Guajillo
Ingredients:
5 lbs chicken
130 g chocolate disk(Ibarra or Abuelita)
A small piece of pilóncillo
3 cloves
4 all spice berries
1 tsp peppercorn
1/2 tsp cumin seeds
1/2 tsp thyme
1/2 tsp marjoram
1 inch cinnamon stick
1 tbsp sesame seeds
2 tbsp- sliced almonds, peanuts, pecans, pepitas, raisins
1/2 bolillo bread
1 corn tortilla
1/2 cup animal cracker
1 small onion
1 Roma tomato
4 garlic cloves
1/2 plantain
8 New Mexico or guajillo chile pods
4 chile pasilla/ancho
2 chile negro
1-2 Chipotle peppers
1 serving of love 💕

Childhood memories of my Nana Lupe making this mole in her kitchen. I would love to sit there and watch her ( of course helping her ) but watching her put so much love and happiness into making this special dish. Hi, My Mom was from Puebla where it originated, she used to make it more in the sweet side, the sweetness combined with the hot spicy taste is delicious. The story is, nuns from a convent in Puebla invented it when they were going to have a special guest, so they just gathered all kinds of ingredients they had in hand in their kitchen , and mixed it altogether , and came up with this mole. Sadly I never took the time to learn how to make it from her, I will try this recipe!!
I've never had mole, just heard about it, I'm amazed at the amount of different flavor mixes involved, looks and sounds good, I may have to try!
Mole , what can you say but outstanding. It's the best way I like chicken. My grandmother made the best in our town. I was president of a billard league,
and at the end of the year, we had trophy awards and dinner, about 200 members. They always requested grandmother mole chicken, rice, and beans.

Oh boy my taste buds will be dancing the Salsa! This takes a bit of time but definitely worth the effort. Mole is one of my all time favorites. I’ll make it on a weekend as I’ll have more time. Yum. Well I’m way too lazy to make mole so whenever my mom goes to Mexico City I ask her to get me mole poblano en polvo and ship it over to me since she’s in the west coast. I keep it in the freezer and it lasts up to 6 months

I love mole!!! We just had enmoladas yesterday, because I made pollo en mole last Saturday. And your recipe is very similar to mine. The only differences are that I have never added piloncillo (I should try that), because I think that the tablilla is sweet enough. Also, I grind all the spices and seeds before adding them to the broth. If possible, I try to grind everything else, too, to make blending a bit easier.

No disrespect Claudia. But the way you put the whole drum stick in the mole. Is the sloppy and lazy way. It’s better to shred the chicken. Less mess when you eat it. My mom makes it delicious. She shreds the chicken into the mole sauce. It’s definitely better than putting the whole drumstick in the sauce. Your crazy is lazy and messy.

We eat mole with shredded chicken breasts too, and that's a rarity. It appears mole is eaten with chicken parts by most. So you and I are the odd ones out.
