My version of Fried Kway Teow with Cockles a Penang inspired dish

  • Penang is one of the places in Malaysia to get great street food snacks, Nasi Kandar, Laksa and not to mention Char Kway Teow. With tempting aromatics and big on flavours, it's one of my grab and go dish. I'm showing you my version of Fried Kway Teow with cockles, a noodle dish you can prepare in under 10 minutes.
    /INGREDIENTS for Fried Kway Teow with Cockles
    400g kway teow noodles
    200g beansprouts (taugeh)
    3 tbsp chilli paste
    200g frozen cockles
    2 eggs
    Spring onion leaves
    Salt & black pepper to taste
    Oyster sauce
    Sweet soy sauce (kechap manis)
    Minced garlic
    Cooking oil
    for garnishing: spring onion leaves.
    How to make: On high heat, add cooking oil and sautee minced garlic till fragrant. Add 3 tbsp chilli paste (more if you like it spicy) and keep stirring for 4-5 minutes. Add in frozen cockles and stir on high heat for another 5 minutes. Add in the noodles, oyster sauce, sweet soy sauce and salt & black pepper to taste accordingly. Throw in the eggs and lastly, add in the spring onion leaves and beansprouts. Garnish with spring onion leaves.
