When you brine a turkey, what’s happening is that it’s releasing its juices and in turn it absorbs the season juices. And FYI, there’s no such thing as a “dry brine.” You are just seasoning when you do that, which is great by all means, but it’s not brining. Also FYI, a lot of recipes will tell you not to use a pre-brined turkey, but honestly it’s really hard to find them and usually you have to pay an arm and a leg for them. There’s nothing wrong with buying a pre-brined turkey, just definitely make a separate gravy, because there’s no way you’re able to use the drippings... too salty. I personally love the hard side of gravy from bon appétit magazine. And once I made it with apple beer because I couldn’t find hard cider and it ended up being even better. I’m a classically trained chef and I used to work as a recipe editor for a now defunct online pastry magazine with the person who is now the head recipe editor for bon appétit magazine. I’m just a freelance social media manager now.

I live with a low yielding well and we have to be very conservative with water usage. Listening to the water running for so long was painful.
