In newer eclipse versions those issues with the installation and module thing don't appear. I'm using 2023-12.

I keep getting a security warning: "Warning: You are installing software that contains unsigned content. [...]"
When I click on install anyway it installs it, but I can't actually find WindowBuilder when clicking on the package -> new -> other. Tried it twice.

Interesting. At 2:07 you have the review list of items to be installed and at the bottom it says size: 0 Bytes and empty "Details" textbox. Your "Finish" button is active.
I got the same list but the Size is 59,445 KB and in Details textbox there is "WindowBuilder Common Components". My Next button is inactive. So what does it mean?

This feels a little bit like clickbait. The Eclipse IDE you are showing is fairly old. You show Window Builder 1.9.7 installed and in you Java project JDK 1.7 is used. This is nowhere near the Eclipse 2023 your title mentions.
