    i had a job managing a conference center years back. we had the International Coffee Roasters Guild come thru one year. they brought in tons of unroasted beans from all over the world. broke into teams, blended & roasted the beans on-site, then had a roast-off, where the teams judged all the blends. had vendors serving cups out of all the newest machines. when they left (a week later), they left all of those blends behind. i was drinking gourmet coffee for 6 months. ill never forget the sound of 300+ people in a room sampling the brews .. slurping off a spoon. each blend had specific instructions for water temp (to the single degree), how many minutes/seconds to run the brew. way over the top, technically. these people were all about that coffee!

    I prefer using a French press for my coffee every morning. Once I figured out how to get the grind size right, it made a huge difference with the flavor. Its never bitter and has a great flavor and aroma

      Go next level and get a thermal heat gauge to get it up to the perfect temp and let it steep for the right amount of time before straining. Tap vs deionized water also makes a difference IMO. But the temp and steep time really takes it to that next level of flavor, it'll extract the most flavanoids without destroying the more heat sensitive flavanoids, wont be as acidic or bitter, and no burnt taste... I prefer a freshly ground light roast, my favorite is the kind I get in Hawaii. I don't weigh my water or beans like this guy, I just grind them and use so many scoops to a certain amount of water (eye ball) after trying more or less grinds until I found my sweet spot of beans to water, then i found out about temps/time and played around with different recommendations ive found and created a mean cup, it's actually a crime to add sugar or cream to excellent coffee... hell, it's a crime to add sugar to Gas station coffee for that matter, I've always found sugar weird.

      Thats the one thing I'm missing is getting the water temp exact. I work at a chemical plant and use deionized water for titrations, and I always thought it was frowned upon to drink it.

    I used to think all coffee was pretty much the same until I started using a french press, and then later, getting decent beans and fresh grinding them before making. There is definitely a big difference.

      Have you tried filter coffee, using your own filter machine?
      I was a long term French-press lover but admittedly it would make my heart shoot through the roof.
      I changed to filter which was much less intense but more than enough caffeine. I later learned that with a french press you consume caffetol which is possibly harmful for your cholesterol levels.
      Only thing worse is espresso capsules.

    I'm glad he said what he said about drip coffee makers being essentially the same as pour over. People get so insane about different coffee methods but freshly ground beans with a drip machine can make an excellent cup of coffee.

      Uh, thats not exactly what he said. most drip machines don't allow for the blooming process, only the old school drip glass Bunn machines do and make great coffee - not your cheap-o $50 drip machines that you buy at Target. Thats why he's a pour over guy - while the grounds are blooming he goes and takes his morning dump and then pours the rest of the water over the grounds when he's done evacuating his bowels.

      I've met some really rad coffee snobs but yeah having to talk to the wanker coffee snob variety always blows. We've got some of those wanker types at my local shopping centre (mall) as a new shop is opening and they are trying to drum up excitement for it. I stopped and spoke with them last week and I could not wrap my head around their new concept. So it's a up market coffee shop but integrated into it is a travel agency. I thought they were pulling my leg when they said it then I had the flyer thrust into my hand and the dude had a weird smile on his face. I made a joke to him about putting something illegal or unknown in the coffee so people sit and drink a cup then go buy a ticket to Hamburg or some shit. And he was like "No, real coffee lovers have that wanderlust inside of them". Tbh I think it's a front for some weird ass cult cos those wanker coffee snobs gave off such bad energy.

    His comment about the Bunn is correct. We had a 2-pot Bunn coffee maker at a construction company I worked for and it was the best coffee ever. The stainless steel inner parts helped. But it was also built like a tank. It made coffee for over 100 people 5 days a week for 15 years.

      True! My parents discovered the Bunn from our friends/neighbors who owned a funeral home and they were only sold commercially. I will always remember my coffee loving parents (and adult children) commenting on the best coffee is only found in the best restaurants as if they went out to eat for birthday celebration and anniversaries just to have that goooood coffee. Their friend purchased one for them and they were in coffee heaven. Then Mr. Coffee hit the market and the rest is history. Kinnda like Vitamix is to the household blender. No comparison.

    Something that is crucial to any of you wanting to truly experience coffee for the first time:
    1. Get the freshest beans possible. If you're getting it from the roaster directly and they were roasted like two hours ago, you should let them gas off for 24 hours. Then, consume them within a week and a half for optimum flavor. Grinding beans just before brewing is crucial but if they were roasted six months ago or longer (chain grocery stores, looking at you) then even grinding before brewing you're still using old stale coffee.
    2. Where the bean comes from determines the flavor profile (the roast level determines which aspects of that profile are brought out, emphasized, or deemphasized by destroying acidity and caramelizing the sugars and whatnot). If I have the option, I only drink African beans because they pretty consistently have more berry, floral, and citrus flavors. South American beans generally are more nutty and raw cocoa-y. Blends of beans from various regions will produce a different flavor profile. Find a good local roaster or cafe that gets beans fresh as fuck and ask them to sell you or make you a sample cup of different kinds of beans through a pour over. Once you know what you like, and learn how to taste the coffee more than 'dark roast' or 'tart', you open yourself to a whole new world.
    If you ever want to roast yourself, go to a thrift store and find an air popcorn popper. Order a sampler of u roasted green beans from Sweet Maria. Watch a five minute tutorial. Now you can experience the freshest coffee of your life. Great coffee that is as fresh as possible can be an almost psychedelic experience. Slam a quad latte or french press of some fresh fresh bean and you will know the secrets of the universe.

    The steep is to allow the CO2 in the beans to release.. CO2 prevents the tannins, or flavor, of the coffee to be transferred to the water. By steeping, the beans release the gas, which is why it bubbles and "blooms". After the gas is released the rest of the water is added to get the most flavor out.

    Used to work at a coffee shop that had a clover which was great. But my favorite was the pour-over. Speaking of blooming though we had a rule, I forget exactly the numbers but it was something like: X ounces of water poured over grounds over Y amount of time. When done correctly it made the ultimate strong cup. We had a pretty special black honey processed bean called Finca Desamporados. When done with a pour-over...oh my God it was THE cup of coffee.

    There are couple of reasons I prefer pour over to machine: One is just the ritual of the process. It is very satisfying.... Two, you can learn a lot about the beans during the process: How it blooms, how fast/slow it flows. Certain beans need a finer grind than others, and you can learn that if you are in full control. In the end it's just a cup of coffee, but much more rewarding that using a machine. Not unlike smoking a brisket on an offset smoker. Sure, you can cook a piece of meat in a pellet oven, but it's just not the same as cooking with wood and being in full control of every aspect....

      Yes! I watch alot of brewing on my IG and observing the blooming, especially the second bloom I think one can tell if the roast is fresh, as the colour of the "foam" says alot and the rapidness it develops in, fascinating to watch I think

      I'm the same, just a big ol' cold brew from Starbucks. Sometimes it's real nice, sometimes it's terribly bad. Living in Melbourne tho, there's a place on every corner where you can get a good cold brew/iced long black. I just go to Starbucks for the sizes

    Not to complicate it, but as soon as coffee is roasted it begins releasing carbon dioxide. The first two or three days after a bean is been roasted, it can taste pretty bad. Although that is a pretty preferential statement, it’s a general consensus. To really have some of the best flavors out of your coffee you don’t want to drink it within 14 days of roast date. Now as for the blooming process, when pouring hot water on the grounds that accelerates the release of carbon dioxide. I do 845 second bloom, I’ve heard of people doing up to two minutes. But then at that point you want to begin the brewing process and finish your pours. There are tons of methods and recipes for a pour over, but some thing you can look into.

      Probably the acids in the coffee. Try cold brew it's 80% less acidic. I had ulcers in my early 20s n gave up coffee for that reason till I found cold brew coffee. It's so simple to make

      I had a good friend in Minnesota that owned a really nice coffee house. She loved coffee and she made it in any style you wanted there. Turns out she was allergic to caffeine and had just suffered miserably for years from it. Had to give it up. Sold her shop too.

    Best coffee I ever had: shout out to that cafe inside the Vienna airport in Austria. They only had little cups with saucers, no to go cups, and I was there with my ex wife waiting for our flight. Never have had coffee that good since.

      Cold brew is the best way to make coffee right. It's the smoothest, least acidic because there's no heat involved, and richest flavors. It also has the most caffeine brewed this way as well.

      I think it could be argued both ways. Starbucks has made coffee super popular. Depending on where you live, coffee culture is still thriving even with Starbucks nearby. Both can have their place.
      In my mind, Starbucks is the fast food of coffee. Not great tasting, but consistent and widely available. If I want to actually enjoy my coffee, I’ll either make it myself or hit up one of the many local coffee shops around me.

    I have a Breville espresso maker. I’ll grind the beans, make a double shot, then I like to re-brew that double shot (I call a double-double), essentially making an Americano. The only difference is instead of just adding more water, you re-brew your coffee to extract more flavor (and possibly caffeine). I feel like a single brewed espresso is kind of a waste if I do it, honestly.

    He is right about letting the coffee bloom. Mr Peet, in Berkeley, taught us how to make coffee in the late 70's at his shop. This is how we've been doing it since then, although I don't measure it exactly. Plus it depended on where you lived if there were cafes and coffee culture.

    I've tried all kinds of coffee makers over the years, and came to the conclusion that the cheapest makers are the best. My every day coffee is made using a $7 ceramic funnel, so it's a pour over. He is also very correct that weights and proportions are important, as is the blooming process. I also roast beans myself which is even yet another key component to flavor. My large mug of daily coffee (roughly the equivalent of 2 cups) costs me less than 50¢ to make, including the cost of the filter. My second-place coffee maker is the Moka. That's when I want an espresso type coffee. That maker cost less than $20.

      @@davidforal157 I use my toaster oven. Set it to bake at 450, put the beans on a tray, and when you start to hear cracking, shake the tray every 30 seconds or so until it's at your desired darkness. It takes about 10 minutes to do a medium-dark roast. I get my beans from Primos coffee. a 3 pound bag is less than $20 including shipping. Oh yeah and for best results put the roasted beans in a glass jar with a lid for a few days before grinding. I keep the roasted beans in 2 mason jars, and when one gets low I roast more beans.

    We went back to a percolator last year and it's amazing coffee. What made us do this is how bad keurig style makers are, and how we've spent a decent amount of money over the years buying the latest maker, and never having the Java we craved. We still own several manual types, but the percolator is the best everyday cup of Joe. Lol

      @Britney 9 I like it both ways black if I'm in a hurry or if I make cold brew it's black. But I like a little heavy cream and sugar free syrup. Those chocolate notes are more pronounced probably from the milk fat. I like it for the flavor.

    The best cup I ever had was on a 40 degree morning in the Jamaican blue mountains next to coffee farms sitting in a 200+ year old coffee plantation house. It was magically delicious. That was farm to table. I like cream and sugar. I knew better that day. I drank that cup of coffee black.

      The best cup of coffee I remember vividly was at a Denny's Restaurant in Seattle where they served Seattle's Best Coffee (Local Brand there, so amazing). I wasn't expecting it to be anything more than a regular cup of coffee I had gotten in the same restaurant chain 1000 times before. I found out later on that people in Seattle are very proud of their coffee and only want the best. Coffee and Teriyaki.

    We got my friend's Mom's Percolator out of the attic. It tasted the same as Auto-drip . It also took the same amount of time. Plus you just shake the grounds into the garbage, and rinse the remainder down the drain. Plus no trees have to be killed.

    Two reasons the Bunn type commercial coffee makers make great coffee: They are fully programmable and allow you set a time to wet the coffee and allow it to bloom before the brew cycle. Also you can program the exact water temperature you want for extraction. Most home coffee pots simply are not hot enough, probably due to liability concerns.

    You have coffee then you have coffee that you appreciate. It's cold, you heat some water in your canteen cup with a heat tab. Then you open a packet of instant coffee that came in your C-Rations. Your put the coffee in your hot water then stir in your packet of chocolate mix, creamer and sugar then gulp it down before it gets cold. This is a recipe every 11B knows and is tried a proven. And in case you can't use your heat just put the instant coffee between your cheek and gum, guaranteed to keep you awake while on perimeter duty.

    Ground coffee contains a substantial amount of trapped carbon dioxide which gets released when hot water is added. The blooming helps reduce the tiny channels made in the ground coffee so that the majority of the water added after blooming goes evenly through the grounds and not through the channels. When you do a manual pour over, you will notice that the flow rate decreases over time as the channels collapse further and the grounds compact.

    I remember when Seattle didn't suck and Starbucks moved in and put multiple SBC(Seattle best coffee) ,and multiple other small coffee shops out of business.
    How? I have no idea because Starbucks tastes like truck stop coffee that's been in the pot for 14hours.

    "21g of getting coffee for... whatever amount of water is a cup of coffee" ... very helpful (?). 30g/250ml water is a great starting point. My understanding of the blooming process is 30-45 seconds max before continuing the brew or it starts to effect the drink in negative way. James Hoffman's videos are a great resource.

    I drink mostly light roasted coffees of origin from all over the world and yeah Starbucks is WAY over-roasted, yuck! Best method I ever found is a simple pour over method and I use water at 190°F. I will say I never don't listen to others, so I guess I must try this bloom thing.

      I feel you on this. My customers love dark roasts but I like a light to light-medium roast. Specifically for me will have to be 5:Brazil 4:Ethiopian 3:Guatemalan 2: Colombian 1:Hawaiian preferably from Kona or Maui 100% single origin no blends

      Gotta bloom it. His bloom sounded long, but :30-:45 is a standard bloom length. 2:1 water to coffee ratio for the bloom is what I do.

    I put coarse ground beans (2 scoops) in a quart Pyrex, then add almost boiling water, stir, cover it with a plate, wait 5+ minutes, then I pour it through a metal sieve. This is how I avoid adding anything leaching from plastic or the gross taste of a paper filter.

    Love coffee I drink black coffee took a while to get used to but I actually prefer my coffee black but one negative I can take away from coffee is that it usually leads to me having negative thoughts, I dont know why it happens but if I drink a cup of coffee I start to think negative get a bit depressed and I tend to get anxious dont know why.

    My best recipe:
    Add a 2 tablespoons of fine ground organic coffee to 2 cups of water, shake well, put in the fridge for 24 hours, drain through a drip coffee filter into a pan on the stove and warm up just before boiling. And I add 1/4 cup of half & half.

    My small experience in making espresso coffee was by experimenting with how coarse or fine you grind the bean really affects the flavour of the finished product and it is different from brand to brand. It is important to buy a good grinder with a number of different settings for best results, of course the water temperature has to be right as well as using good filtered water.

      Coffee like cocoa , changes it's flavour profile , depending which country it's grown in , like wine grapes , grown in one valley , will change from winery to winery , and that continues , over a whole region , hence the reason that Champagne, only comes from Champagne province , anything else is in the method of Champaign.
      As for my Coffee , I like 'camp coffee's , which is made with cold water with the grounds in it , bring to a simmer , allow to stand for a minute , with a grain or two of salt , to give it a better flavour profile . Plunger coffee , is of , same with the filter drip coffee , Expresso when done right is real nice , yet if the bits of the machine are not cleaned regularly , it takes on a bitter taint which no amount of spices like Cardomon will hide , even the salt , won't help , as the residue from to many previous creations still pervades the finished product .
      I'm fortunate , in that there's at least two roasters in my wider neighbourhood , both access their beans from different places , which I'm quite happy to mix together to get a palateble brew .
      My favorite beans are Blue. mountain , from Jamaica , as it's natural y sweeter and less acidic than most others . The length of the roast has a lot to do with the final product also .

      Coffee is the most complex drink we have ever encountered! I've roasted and sold coffee for 20+ years. Not all coffee that's sold in shops are for espresso. Just like not all apples are good for making a apple pie with or eating off the tree. Some species of coffee are naturally great for espressos and other types would taste terrible as an espresso. Usually, if your coffee is not tasting so great, there are 3 main things you can do about that. Buy fresh ( difficult to do because most companies only list "sell by" dates)! Grind it just before using, and keep the beans in a airtight container. Everything else is up to your taste buds.

    My friends got me onto cold brew. 80 grams of coffee, about 800ml of cold filtered water, a pinch of ground cinnamon and then stick it in the fridge overnight. Next day I filter it through a French press and a paper filter and use it like a concentrate about 1 part coffee to 3-4 parts hot water. I assume because the coffee flavors are extracted in cold water there is 0 bitterness and all you get is flavor country.

    No one seems to talk about temperature, and that is such a major factor. Most, almost all of the machines and coffee makers we use do NOT bring the liquid to a boil. Reaching the boiling point and maintaining it for 3 minutes is what takes the bitterness out. Want a perfect cup of coffee? You can make it on your stove top. Buy good, whole coffee beans, grind them yourself. Use distilled water. Other water has chemicals in it....purified, spring, etc. have "taste" to them. Distilled water has been vaporized, and then recollected. It has removed everything. So nothing alien to effect the taste. Fill a large pot with water, put it on the heat on your stove top, and bring it to warm. Slowly pour your coffee grounds in to the water, then turn it to boil. Once it has started to boil, time it for 3 minutes. Then turn it off. Take a cup of the same distilled water, COLD, and slowly drip/pour it over the top of the coffee IN THE POT. This will cause the rest of the grounds to sink to the bottom. Then with a cup or deep spoon, spoon coffee through a fine screen strainer into your coffee cup. Often, you don't even need to do that, as the grounds should sink. But t be sure it is perfect, strain it. You will taste bold, delicious coffee, smooth, yet strong, with no bitterness. Try it. Its more work, not much really, but on a weekend, going to lounge around all morning, treat yourself to this old school "cowboy coffee" technique.

      Distilled water is terrible for brewing coffee. The minerals found in properly balanced water are needed to extract the coffee properly. If you re-introduce minerals into distilled water, then you're good. But simply using distilled water to brew will not result in a properly extracted and tasting cup.

    Coffee culture has been in the us since the Italians and Latinos showed up in the 1600s. I could easily get an espresso in any real city in the 60s and 70s. It’s very much part of foodie culture .

    Simple answer: Use a standard coffee maker with quality grounds and don't let the burner stay on for a long time. My morning ritual is similar but after I shower, I turn the burner off.

    Just do what I do. Buy whatever ground coffee, then grind it a little finer at home. Use an Italian style stovetop coffee maker, only place it in your automatic rice cooker (without the pot) instead of using the stovetop. It will automatically turn off when the brew is done and keep it nice and warm.

    I personally just mix some instant coffee with creamer every morning, and save some for later on at work. It’s the effects I care about, & I tried some nice arabica drip coffee a while ago, but didn’t see much of a difference to keep making it. I do understand the enthusiast aspect though since I am a maryjane enthusiast.

      I’d like to just add that there are so many facets to coffee that looking into using different brewers, fresh local roasts, and techniques really makes the possibilities limitless. I would guess that there is something out there for you to try that would make that instant coffee look like something you wouldn’t want to touch again, maybe the last one one you tried wasn’t it.

    I used to love starbucks coffee's and I drunk them black. Like alot of things its a aquired taste. The best coffee I ever had was Columbian Supreme at the Fountainebleau in Miami Beach. It was amazing. Oh and saturating the ground coffee beans first before brewing was taught on good eats years ago by Alton Brown.

    Cold brew for 24 hours tastes the best to me. Have it over ice or heat it in a pan on the stove. I mix it with my favorite creamer and add a couple pinches of cinnamon, but black with cinnamon is good also.

      Yep and I use my Royal Brew Nitro coffee maker, turns my cold brew into foamy thick cold coffee, like a coffee version of sipping a stout.

    Two dessert spoons and 600ml of 90 degree hot water in a coffee press. Mix and wait 6mins. Perfect coffee every time!

    Starbucks admitted in the early 90s that all their coffee beans were burnt they didn't know how to roast them. LOL. The first time I tried it I returned it telling him it was burnt and they told me that's the real flavor of coffee and I laughed at them and I said I wanted my money back that was the last time I went to Starbucks

    30g coffee, 60g water for 45s, +240g water for 30s, +200g water for 30s, 1:15 of draw down. Summary - 30g coffee, and ~3mins of brew time. If it takes more than 3:30 your grind is too small, if it takes less than 3 mins your grind is too big. Adjust your grind and away you go

    Blooming simply means the grounds swell up (bloom). You gently pour the water over the bloom trying to keep in intact while avoiding the edges.
