Until you learn the mystery of the art... use a thermometer, stick it in the thickest part of the meat and wait until it reads the correct temperature. Giving exact cooking times... especially outdoor fireplace cooking where wind, temperature, and humidity has huge effect on cooking time (including the size of and type of fire fuel used)
