    Your presentation is seamless. I prefer the light, fluffy bakes. The ackee and saltfish looks scrumptious.

    Great job Ria 👏. Please don’t worry about the critics cuz most of them can’t cook or can’t cook good food. You do your thing and it’s a compliment when a chef tries their best and cook another country’s cuisine. Some people just don’t get that as they haven’t evolved. You are a classy woman with a knack for teaching about food.❤

    Jamaicans also fry the fluffy light dumplings/bakes. They fry those fluffy light dumplings and festivals on the beach and we eat it with fry fish. Hellshire beach is famous for light fluffy festivals and dumplings.

    Your ackee and codfish looks great. I am sure it also tastes great.
    We are lucky here in Miami to have a tree, so we get it fresh. Big difference. But if only we the canned is available, that is what you have to use. Ackee has a very short shelf life, it is similar to avocado. So hard to find fresh.
    Your rendition is very good. Most Jamaicans eat it with white rice and boiled green banana on the side, maybe a boiled dumpling. All good.

    I am Jamaican and prefer the fried bakes.Much lighter and less doughy.I also pinch open my bakes and stuff them with ackee n saltfish or calalloo.

    Rita as always you are a very gracious lady and have nailed the ackee and saltfish preparation perfectly. As a Jamaican I felt a wee bit sheepish that you fear being chewed out by obviously some rude Jamaican should you dare to not do the dish exactly as they think you should. Sorry to say a few of our people are still way down on the civility scale, so please forgive us. I love your way of patiently explaining the method you use to prepare particularly Bakes. I have tried it to imitate you, but my fingers are not as agile, so mine are more Fakes than Bakes 🤣.

    Hi Ria, I just love to watch your videos!💯 My cousin Stella in Tobago is married to a Jamaican who planted ackee trees on their property. You can find her at LA Maison de Craft located at Castara Bay. I am sure she will be obliged to provide you with organic ackee to bring back to the US.❤🇹🇹

    RIA, Hello, where I buy my ACKEES, there are 4 brands, normally we kept 6 cans, but at times even GRACE is on sale, if I catch it I but more than I can, if you ever seen ackee trees, I can tell you which one stayed solid,it has a SMOTHE POD, if you get the WRINKLED POD, it’s like SCRAMBLED EGGS, , I make it virtually the same way, thanks, stay well, 🇬🇧🇹🇹🇹🇹🇯🇲🇯🇲🇺🇸🇺🇸

    Love your cooking! Sorry you feel as though you have to do things a certain not to get cursed out. People need to understand that there's no one correct way when it comes to cooking. Keep cooking the way you do and forget the negativity.

    This is exactly how I like my ackee and salted cod fish to look. I like my ackee in chunks and not mashed out. Also, my salted cod has to come from Canada. No disrespect to China but my salted cod has to come from Canada.

      Where you see she add mushrooms? Btw, lots of Jamaicans eat mushrooms. It’s called keeping an open mind and allowing cuisines to evolve. Sorta like how people are supposed to evolve.

I live in the US and immigrants here tend to keep an open mind and try different cuisines and they do modify their own cuisine including Jamaicans and I KNOW that cuz my mom’s Jamaican friend does it. She is a traditionalist but she does her own thing cuz she loves mushrooms. Not because you are from a particular country does it mean you can’t modify and try different things.
