  • This is a burnt cheesecake originating from the Basque region of Spain. It has a rich and smooth texture with a delightful caramel-like flavor. To achieve a nicely dark browned surface within baking time, I gently warmed the eggs and cream to prevent the batter from cooling down. To achieve the caramel-like flavor and browning, it's recommended not to reduce the sugar.

    [INGREDIENTS] for a 15 cm round cake tin
    240g cream cheese, room temperature
    100g granulated sugar
    120g beaten eggs (around 2 eggs)
    200g heavy cream
    1/2 teaspoon lemon juice, optional
    10g cake flour or all-purpose flour
    Place in an oven preheated to 250°C, set the temperature to 230°C, and bake for 30 minutes.
