Looks delicious. Never used cloves, but for sure I would add a bay leaf early on, a few dashes of Worcestershire sauce and a little grated nutmeg to the Bechamel sauce.

Thank you so much for the inspiration and yes you are right they aren't as hard as they seem to make just make sure you follow the butter instructions exactly like in the video.
In school, we made beCHAMEL with an onion piquet. A clove stuffed onion that is charred over gas flame (eye roll). It’s made then steeped in the bechamel. Great nuance. Major pain in the ass.
