Knives are weapons (that raise thievery) and tools (get meat from dead) both. Kill easy prey with the knife to raise thievery. You can have 2 load outs (Shift-X to swap). Use axe in load out 1 and knife in 2.
Since knives are common loot, you would be better off selecting the pick axe during character creation to mine stone, ores and gems as you find them. Also, the first loot you find, don't scrap but sell to get your first 100 gold to buy a region to start a base. Use the axe to chop trees in to logs and logs into wood to sell to get the 100 gold. Mine all rocks that you see into stone and build in the POI region anything in the construction recipes list to raise construction.
All of this is in episode 2. I specifically didn't choose the pickaxe to have a good reason to explain and visit the toolmaker. If you want a faster and optimized start all of your points are valid. I try to introduce the game in a non min-maxed way, so all of these strats are logged a little bit later in the series.
Don't forget, the initial skill choices also influence other things. One: max potential you begin with is 20 for those. Two: access to magic. Getting floromancy or pyromancy is HARD if you don't start with it. I recommend starting with at least pyromancy all the time. Three: initial skill level is 5
Yeah, very true. I didn't advocate too hard for it, as it's a Beginners Guide and I hope that access to magic won't stay that super restrictive in future versions. And yes, Pyro + Floromancy are really strong! Thanks for your comment o/
