A Greek Meal in under 60 mins! Briam with Keftedes

Ingredients
For the Briam:
1/4 cup olive oil
1 large eggplant, peeled and diced
3 zucchini, diced
4-5 potatoes, peeled and diced
1 onion, finely chopped
6 garlic cloves, grated
1 bell pepper, diced
1 teaspoon dried crushed oregano
1 (15-oz) can crushed tomatoes
salt, to taste
freshly cracked black pepper to taste
crushed red pepper flakes to taste
1/4 cup finely chopped parsley
2 tablespoons finely chopped fresh mint
feta cheese for garnish
Serve with:
feta cheese
kalamata olives
bread
salad
keftedes meatballs
Instructions
Heat a large Dutch-oven or pot over medium heat and add the oil.
Add the eggplant to the pot and season with salt and pepper. Cook over medium-high heat until golden. Transfer to a plate
Add some more olive oil to the pot and do the same with the zucchini. Transfer to the plate with the eggplant.
Reduce the heat to medium and add the onion, potatoes, and bell pepper. Season lightly withs alt and pepper and cook until softened. About 10 minutes.
Add the garlic and warm through until fragrant.
Return the eggplant and zucchini to the pot and add the tomatoes, oregano, and crushed red pepper flakes. Bring to a boil and then reduce the heat to low. Cover the pot with the lid and simmer for 30 minutes or longer.
The sauce will thicken and the vegetables will be very tender. For a thicker sauce, cook it longer.
Taste and adjust the seasoning if needed.
Garnish with the herbs and feta and serve with meatballs, olives, and bread.

On my last trip to Spain, I got such a good sautéed veggie dish with eggplant...no heavy spices, quality oil...still haven't been able to duplicate that yet here. Will try this. I'm sure I wouldn't have looked at eggplant when I was young, even if my mom had tried making it. But it's a veggie that will stay with you a while

Do you have a recipe that involves stuffed grape leaves (rice and beef). These get cooked in a pot of water.
Here’s the part Im looking for: my Greek great uncle used a broth that included folding/incorporating whipped egg whites into the broth and lemon juice was also part of this mixture. Not sure when the lemon juice was added. He covered the pot with this entire concoction and simmered. It was delicious!!! I made them from scratch .. dried but tender grape leaves 50+ years ago. They were also yummy eaten cold the next day. The egg whites seemed to separate or curdle while sitting in refrigerator, but they didn’t separate or curdle when served warm and just cooked.

I want to make your flaat bread so badly but I am gluten free I have made bread using a combination of almond flour, Bamboo fiber eggwhite powder and a few minor ingredients and I use yeast do you think this method of your flatbread would work with gluten free flour Julianna NC
