I am in Wisconsin, the land of tomato based chili with beans, very chunky served over cooked elbow macaroni. Your chili is not just from a different state, it from a different world. The only way I’ll get it around here is to make it myself. Thanks for the tutorial and ingredient list.

Thank you for sharing the ratios along with the ingredients, took about 2 minutes to scale it for 5 lbs (2268 grams) of meat. Not sure how soon a trip to Texas from far northern Canada will happen but now I can try a reasonable home copy of your chili.
I used your recipe today only didn’t have any beef cheeks scraps around so I just used ground Chuck with a little extra tallow. Made some pretty excellent chili dogs and frito chili pies. Thanks for posting!

Hey Evan - I'm trying to figure out the scaling of the recipe and the water in the chili puree part doesn't make sense in this context. I'm guessing you used to cook the chilis with excess water separately from the spices and then you combined it back in but left some of the soaking liquid behind. It's unclear what % water to actually add to the puree / spice mix? I'm trying to scale the whole thing down to 3lbs of meat.

The “no beans” animosity is so odd to me. If I’m eating a bowl of chili, or a frito chili pie especially, beans are always invited to the party. If I’m eating a chili cheese dog, a chili without beans is slightly preferable, but I’m still not mad if beans are present. 🤷♂️🤷♂️
Very simple, no beans in the chili. Beans are invited to the party but must not be included in the chili. This is the way it is written in the Official Chili Rules of Texas.

EDIT: I have a very similar recipe but i add stale corn tortillas/tostadas. I like charring the tortillas first too.
Absolutely on scrap. I broke down 100 pounds of beef cheeks and came out with the same. But damn there is some badass barbacoa as a result.
For us SoCal people this is like Tommy's chili minus the masa!
