    #### Ingredients:
    - **Pork**: 1.5 to 2 lbs of pork shoulder or pork belly, cut into bite-sized pieces
    - **Vegetables**:
    - 2 medium carrots, sliced
    - 1 large onion, chopped
    - 2 cloves garlic, minced
    - 1 bell pepper, chopped
    - 1 scotch bonnet pepper (optional for heat), whole or chopped
    - **Herbs and Spices**:
    - 2-3 sprigs of thyme
    - 2 stalks of scallions, chopped
    - 2 tsp allspice (pimento)
    - 1 tsp paprika
    - 1 tsp black pepper
    - 1 tsp salt (or to taste)
    - 1 tsp ginger, minced
