[賤哥的灶卡] 冰鎮糟滷豬手 Chilled Pork Hocks in Superior Pickle Sauce

  • 參加主題生日派對. 主題是上海風. 剛好朋友送了一瓶糟滷. 就來做個冰鎮糟滷豬手. 因為份量太多, 所以要多次替換位置才能都入味.
    Going to a Shanghai style birthday party. Happened got a bottle of superior pickle sauce from a friend and decided to make this dish. Prepared too much pork hocks and not enough sauce. I have to rotate the hocks a few times to ensure they are well-marinated.
    材料 Ingredients:
    豬手4隻 Pork Hocks 4 counts
    薑1塊 Ginger 1 piece
    青蔥2根 Green Onion 2 stalks
    八角5-6個 Star Anise 5-6 counts
    花椒粒1小把 Sichuan Peppercorns Small handful
    紹興酒1/4杯 Shaoxing Wine 1/4 cup
    葡萄牙鹽花1小匙 Sea salt 1 tsp
    糟滷1瓶 Superior Pickle Sauce 1 Bottle
    枸杞1小把 Goji Berry Small Handful
    作法:
    1. 切好的豬手用噴槍燒去毛
    Use torch to burn off the hair on the pork hocks
    2. 洗過之後. 再分切開來
    Wash clean and cut into pieces
    3. 切好之後放入鍋中
    Put the cut pork hocks in a large soup pot
    4. 加入薑跟青蔥
    Put in ginger and green onion
    5. 加入八角, 花椒粒, 紹興酒跟鹽. 再加水加滿
    Add star anise, sichuan peppercorns, Shaoxing wine and salt. Cover all with water
    6. 用大火煮滾. 把浮渣撈除
    Put on stove and bring to boil with high heat. Remove the blood forms
    7. 加蓋, 改中小火煮90分鐘
    Add cover, turn to medium low heat and cook for 90 minutes
    8. 時間到後用筷子刺看看夠不夠軟. 不夠軟就再煮. 我煮30分鐘
    Once time is up, use a chopstick to test if the pork hocks are soft enough. If the chopstick can go through the skin and meat easy then it is good. If not, cook longer time. I added 30 minutes
    9. 煮好之後. 把豬手放到冰水裡. 讓豬皮Q一點
    Once done, remove pork hocks from the pot and add to cold water. This will make the pork skin tasted better
    10. 豬手冷了之後. 把水倒掉. 瀝乾
    Once the pork hocks are cool down, remove water
    11. 加入整罐糟滷
    Keep the pork hocks in the pot, add in the whole bottle of superior pickle sauce
    12. 加入枸杞. 糟滷不太夠, 再加一點紹興酒
    Add Goji berry to the pot. Sauce is not enough so I added some shaoxing wine
    13. 用保鮮膜蓋好. 放入冷藏
    Cover with wrap and put in the refrigerator to marinate
    14. 想到就稍微換一下位置. 讓豬手都泡到醬汁
    Turn the pork hocks from time to time and make sure all the hocks are well marinated
    15. 冷藏一天就可以享用了
    Marinated for a day and ready to eat
