That type of production can't just go unnoticed, along with a .994 career fielding percentage at first base. With his current power, I agree that he hasn't done anything big. As an overall player though, I believe he is doing great,
It's not random. What the ball does depends on the orientation of the holed side and the type of spin put on it. In general, if the spin is such that the orientation of the holed / smooth sides remains constant, the ball will break in the direction of the smooth side. If the sides rotate with the spin then it will tend to mimic the real baseball pitch associated with that spin (just more exaggerated). The behavior is predictable and (for the most part) controllable.

It has a bit to do with doctoring. Scuff balls and spitters rely on drastically changing the wind resistance of part of the baseball. The half of a wiffle ball with the holes creates much more resistance than the smooth side so it acts like an exaggerated version of a doctored ball (holes = scuff, smooth = spit). They could have used a real baseball, but to do it justice they would need a pitcher familiar with using doctored balls and I doubt many would really want to advertise that skill.
