@Switchkid64 Well, as far as I know Dracula (The main source of modern vampire lore) didn't have a weakness to sunlight he just wasn't as powerful during the day.

IIRC, the "Vampires are weak to garlic" thing originally comes from Bram Stoker's novel, Dracula.
Specifically, it's from after the titular Dracula bites Lucy (a character who is not directly important to the matter at hand). Professor Helsing, realizing that she's been bitten by a vampire, fills her room with garlic flowers to protect her from Dracula while she sleeps- only for his attempts to protect her to fail, as Lucy's mother decides to throw the flowers out so Lucy can get fresh air, because they stank.
Consider, for a moment, that vampires have enhanced senses, and a normal human was unable to stand the smell in the room. I wonder _why_ Dracula would have been (theoretically) repulsed.

I think the best version of why vampire have such random weaknesses is in Warhammer Fantasy. When they betrayed Nagash he cursed them with whatever came to mind. It makes me laugh to think about some godlike Necromancer just randomly adding whatever came to mind as a weakness. It's so petty but really hilarious.

So, the garlic thing: it started not only for vampires, but as a "purifier" of many evil things, including ghosts and undead, so... Yeah, it affects vampires because they're undead, and get themselves purified by the garlic.
Iirc, they're mostly symbolic.
The "not showing up in mirrors" was, because at the time, mirrors were mostly made of or backed with silver. Silver was seen as spiritually pure/antithetical to evil or something of the sort (possibly due to silver having antimicrobial properties), which is why silver was seen as especially effective against unclean spirits/Monsters. Vampires have no reflexion in mirrors, because it was believed, that silver basically refused to reflect the image of such an evil Soul. That's also, why they don't show up in photographs, because in the early days, the process to make/develop a photograph involved silver (I think it was silver nitrate).
Similar reason for the weakness against water and garlic. Garlic has antimicrobial properties, and water too was seen as cleansing.
Vampires were believed to have these weaknesses, because vampires are seen as evil, unclean spirits, and those things were associated with purity or cleansing properties.
Apparently, in some places, it was custom, that when you thought your child has the evil eye, to take a few silver coins and put them into a bowl of water (basically infusing the water with the silver) and then to sprinkle that water onto your child to cure/drive out (?) the evil eye.
