Also, adding about 2 oz of softened cream cheese or marscapone cheese to the Alfredo sauce helps it to "emulsify " as Dad kept talking about. It makes it creamy, silky, and thickens the sauce just right. Definitely not the traditional Italian way but a great professional chef gave me that tip.
