THE BEST SWEET POTATO LEAVES RECIPE: CONGOLESE MATEMBELE

  • Hey friends family, I’m sharing with you how to make this tasty and delicious and nutritious Congolese sweet potato.
    Sweet potato leaves is rich in vitamin A, vitamin K, B Carotene, B6, iron, calcium. Protein.....
    Ingredients
    - sweet potato leaves
    - bowl of dry and salted fish
    - 1 medium onion
    - 2 fresh tomatoes
    - 3 gloves garlic
    - scotch pepper, habanero pepper and sweet peppers
    - 2 full Tbsp creamy peanut butter
    - 1 cup palm oil
    - 1 shrimps Maggie flavor
    - 1/4 leek
    - 1 Tbsp salt
    - 3 cups water
    Cooking Method
    - In your pan, add water, salt and peanut butter and let cook.
    - On a other side, add in a blender, onion, tomatoes, garlic, sweet chili, leek. Together blend and add the mixture and your dry fish into the pan, let it cook for 5-7 minutes.
    - Continue cooking for few more minutes or until the sauce is thick.
    Add palm oil and peppers for 2 more minutes. Add the sweet potatoes leaves, keep stirring frequently.
    - Continue cooking, at the very end you will see that the palm oil floating at the surface.
    Here is the Sweet potatoes leave ready. You can serve sweet potato leaves with Rice or Foufou.

    I love it my husband is Congolese and he makes it for me but we don't use salt together with magi cubes use one or the other.,if you use salt use Himalayas salt. Thank you Mammon Janine

    I researched palm oil because of one of the comments, and there is conflicting information on health benefits or risks. This recipe sounds delicious! We've been eating a bunch of sweet potato leaves this summer here in Texas.

      I do not know, but me and others Africans been eating palm oil all our lives. I suggest may be you can just use regular oil. When I don’t have palm oil I use vegetables oil.

    In Ghana we use peanut butter or raw 🥜 peanuts, and a bit of bicarbonate of soda.😮

    This is so great. We grew sweet potato in our garden this year because we were looking for a summer green to grow. I have tried using it in spinach dishes but It's very different from spinach. I will try this recipe!

      Thank you, Maggie is simply the type of cube bouillon, it comes different aroma: shrimps, chicken and vegetables.

    … have you considered exchanging your palm oil with another oil that is not toxic ? … palm oil is one of the worst oils you can put into your food and body …

      Regular palm oil is bad but red palm oil is good please do your research
