Certain songs are intentionally recorded at the very top of the artist's vocal range so they can stretch the high parts with grit and passion. When you are touring and playing morning shows and radio spots live every day, it's not practical to be singing at the top of your vocal range every day. 30 percent of songs are rearranged a half step down or more for practicality of vocal preservation on a tour. It's not a matter of skill. It's a matter of vocal health.

After that, you then decide if you want to record it in a higher key. The live performance key is the original key. It might not be original for you because it's not the first version you heard, but it's the original for the artist. There is actually software that allows you to change the key of an already recorded song. It's called Pitch Switch. Have at it.
