Your Office 365 mailbox itself is the backup. If you want a PST, you will have to use Old Outlook. In fact, you can use Old and New Outlook together. New Outlook is available as a separate app on Microsoft Store. Both run together without a problem.
Well, no folder passwords. By default, nobody has access to your mailbox anyway. If you want, you can share a particular folder, right click - Permissions. Add person(s) and set permissions.
