Homemade Greek Gyros with Tzatziki Recipe | Pit Barrel Cooker

  • Gyros are surprisingly easy to make at home and it is a great sandwich for both lunch and dinner. This particular recipe uses ground lamb for that traditional Greek taste. Enjoy!
    Ingredients
    1 medium onion, finely chopped or shredded
    2 pounds ground lamb
    1 tablespoon finely minced garlic
    1 tablespoon dried marjoram
    1 tablespoon dried ground rosemary
    2 teaspoons kosher salt
    1/2 teaspoon freshly ground black pepper
    Tzatziki Sauce:
    16 ounces plain yogurt
    1 medium cucumber, peeled, seeded, and finely chopped
    Pinch kosher salt
    4 cloves garlic, finely minced
    1 tablespoon olive oil
    2 teaspoons red wine vinegar
    5 to 6 mint leaves, finely minced

    I have never had or seen it with mint, and I've eaten a lot tzatziki in the U..S and in Greece Typically it's made with a little fresh dill.

    This is not gyros this is turkish doner..to make gyro you put slises of Meat one up on the other and u make a tower and as it turns it bakes and it become crispy and juicy. Its called gyros because in greek gyros (yiros) means turn .. Also to make tzatziki u first drain the cucamber and then u add it i to the yogurt.. Also u put a lot more olive oil and paper.. U dont drain the final product

      This ground meat style is what the Greek gyro places sell in the tri state area. Commercially they. Come as a shaped and frozen block of meat. It is put on a vertical spit and broiled. The cook then slice the Cooked meat off and makes a sandwich.
      Nothing like they used to do in New York and, I’m sure, Greece.

      ...but none of these dudes know the awesome-ness of....souvlaki.
      Too much mint in the souvlaki. Too-soo!

    You do yours similar to mine. For the tzatziki sauce, I find it easier to strain the onion and cucumber separately and buy pre-strained greek yogurt instead of mixing it all first then straining.

    I squeezed the cucumber separately like you did the Onion. And used Greek yogurt. Looks great BTW

      Patrick Farrell yes I agree. I always squeeze my cucumber separate after letting it sit in a little salt first to draw out the moisture.

      Remove the seeds too, they're unneeded extra moisture. And use the tomato side of a grater instead of a knife, it's faster and produces consistent thin slices of cucumber. ;)

    Man, that looks fantastic. When I visited Greece in the 70's, I fell in love with the gyros. The meat would come to the gyro stands in metal containers soaking in some sort of juice. The meat shaved off looked just like what you did there. I always thought it was a hunk of lamb. Didn't know it was a processed meat until now.

      That was the cheaper version you tried, most grills used it to increase profit at the time, and it was made similar to german-style doner. It was banned for a while after a series of food poisonings (hygiene standards weren't the best at the time, and few followed them).

    I always drain my yogurt a daughter or two so it's almost like cream cheese. I also grate, salt, and drain the cucumber. I prefer dill instead of mint and lemon juice for the acid.

    Man I really like what u did for the kebab I was thinking about using a turkey fryer rack for the meat and hang it in my barrel smoker I would also like to see a video on making a beef or chicken doner kebab

    Suggestion- cleaner and easier to salt the veges and drain in the sink, we like lamb shoulder for our gyros (pulled pork) but that looks cool on the PBC.doing a bone in lamb shoulder on my PBC today. Don`t forget the FETA cheese!

    I like gyros but don’t know why the need of strain the juices of the condiments, to me it’s good to add the juices to the already dry meet. Plus you get the vitamins and flavor of the cucumber and onion. Carne azada and salsa tacos

    Looks good. Making the sauce just drain the cucumber not the sauce and also grate the cucumbers.

    Looks great but you drained that sauce too much, that's the dryest most solid tzatziki sauce ive ever seen, everything else was spot on

    A passable attempt... however I believe gyro meat is a mixture of beef and lamb, and you are supposed to cut around the loaf to get only the crusty parts. I also don't recall ever getting lettuce in a gyro - just onion and tomato, and you use flat bread not pita bread... aside from not actually being a gyro it is perfect.

    Gyros is not made of minced meat. Some sell it so they can reduce the cost. But you should try a real gyros

    It looks dry sauce looks too thick. I'm sure it taste great. I would leave the mint think it would take away from the cucumber.

    Destroyed it. Sorry to say. Good thought though. Everyone has a pallet for taste. It would be better if you used a lamb roast that way. Gyro meat is 80/20beef n lamb.

      Question: I'm not a lamb fan plus I can't get it locally where I live. Any idea how this would turn out if I used beef only. Maybe 20% pork if it needs the moisture. Thanks for any advice you have.

    This is not how you make tzatziki you need to get all the water out of the cucmber tezeke, has to be kinda liqiudy and thic not creamy. Amd the gyro is wrong

    So that was your attempt at making gyros? I'm sure it tasted good but it was not an authentic gyro.I cringed when you were squeezing the tzatziki instead of the cucumbers. With that said we'll give you an A for effort but please don't squeeze the tzatziki.
