It looks like it helps the batter thicken into more of a dough. I've never seen it used like that but now I'm reading and psyllium apparently has been used as a dessert and baked goods thickener for a while.
Unfortunately, technically not gluten-free since yeast was added. Which is a shame since, as someone with celiac disease, baked goods that taste good are hard to come by. Still, lovely video as always.
