  • A fantastic short documentary on the production of cassava bread and cassareep in Region 1, Guyana. Cassava products have formed the basis of Guyana's indigenous people's diet and lifestyles for thousands of years.

    Great vid. I just learned something I didn't know. Jamaicans call cassava bread "bammy". Fried fish and bammy...............great!!!!

    Miss Annette both of your videos are wonderful. we would like to see more videos of this type and how the people live their simple lives. When i come back to Guyana i'll have to come and experience some of the indigenous people life style. here in the USA the fruits and roses don't give off that fragrant scent. i didn't know that's how they made cassareep(did i spell it right?).

    Thanks for this wonderful video. I visited at a friend's home in Guyana in 1976 and fell in love with Pepperpot. I have only had it a handful of times since then when my friend invited me for supper. Lately I have been wanting to make it myself so I checked my cupboard and found two bottles of Cassareep. One is unopened but dated 2007!!!! The other is open and older than that! Does Cassareep expire?
    I found your video when I was researching to see if I could make my own Cassareep. I now know that would be impossible!!!
    I also understand why it is so expensive to buy.
    Can you recommend any particular brand?

    Hmm I am confused/ At first she said the juice from the cassava is poisonous and she was draining it to get rid of it but towards the end she was making a sauce out of it...

      +Farhana NYC It is poisonous when it is raw, but when you cook it you can eat.

      Only the bitter cassava juice is poisonous. The sweet cassava juice is not. The juice from the bitter cassava is used to make starch. Let it settle overnight and the solids will settle at the bottom and the liquid is drained off. After washing the solid several times it is white. It’s then and pounded into a fine flour. That’s the starch
