    Ingredients for the base:
    1-lb. (450g) Self Raising (Rising) Flour
    ½ tspn. Salt
    4-ozs. (110g) Caster (Super Fine) Sugar
    4-ozs. (110g) Trex (Crisco, vegetable shortening or lard)
    4-ozs. (110g) Butter
    Two Large Eggs
    Lemon Curd for the filling
    Few drops of Lemon Extract
    (You'd think the baker would know how much flour he used)
    Ingredients for the Buttercream Icing:
    4-ozs. (110g) Butter
    8-ozs.(225g) Icing (Confectioners) Sugar
    Yellow Food Colouring (Coloring)
    White Decorating Icing
    4-tspn. (20ml) Hot Water

    That sounds very yummy -- lemon is one of the great dessert flavours that I'd even forsake chocolate to eat.

    OK, I was totally surprised by what this actually was! When I saw the thumbnail I thought it was a cake! In the states, we don't really use the terms "traybake" or "slice"... so I'm always trying to figure out what some thing is just by looking at the photo.
    I've never made a recipe that is like this, basically a sandwich cookie! Do you feel like the dough was more of a sugar cookie or a shortbread?

      @MagentaOtterTravels It's an adaptation of the Be-Ro rich jam cake recipe. I doubled the ingredients and added the lemon curd filling, lemon extract and buttercream icing.
      The dough has the texture, but not the taste, of marzipan. It turns out somewhere between digestive biscuits and shortbread. That'll be because of the mix between butter and shortening.

      This is one of my very own recipes. I just took little bits from the recipe books. You'd think that someone making a recipe of his own would know how much flour he had used. 😁😁😂😂🤣🤣
      Glad you like the recipes Anita. I'm working on a special one from Thailand. I'm having to guess the ingredients from Puy's videos as she only shows how to make them in bulk.
