I’d find a kit that works and get it on the head. Look at the head and see if there’s a spot for a sensor.
I used the bosch adapter kit with a head temp sender from amazon. Actron SP0F000009 Bosch Metric Gauge Adapter Kit, AUTO METER 2259 Electric Cylinder Head Temperature Sender

Is the port the sensor is screwed into in a water port or just a blind hole ?
I think it was a hole into the water port
Well it must not be hooked up correctly or your thermostats are stuck open. It should be running at least 165 f initial warmup.
I think it has to do with where the temperature is located on the motor. It’s inside the cooling water so it doesn’t get that hot.
