I am new to your channel. I notice your machine has what appears to be a built in walking foot at the back? Interesting. My mom used to slip a piece of tissue paper beneath the fabric when it was getting eaten by the machine. It tears away easily.

You can use a stretch needle but sometimes I use a regular needle

Great questions. Only use the elastic thread in the needle. I purchased my elastic thread from Wawak.

Do you ever stabilize the shoulder seam on knit garments?
I sometimes use clear elastic or interfacing in the shoulder seam
Why can;t you do the back without a seam in the middle?
You can do the back without a seam, but the seam provides more definition and cleaner fit
