Hi Katherine - I am leaving my second public comment ever on youtube for this video. I only watched a few videos so far but loved your channel. I am on the reverse side of your life - actually from Sichuan and with relatives in Nanjing (having actually driven/ been to most of the places you filmed in this video). I have been in the US for all my college/advanced education for a decade. I would say your impression about the rural life, how fast it has been transforming, as well as the manufacture and industrial impact were spot on. The exact mixture and conflicts of how culture reconcile with the industrialization/ developement and environment post a great challenge to the country (and, to any developing countries) and to people of rural places. Like you I really loved travel to small villages to see how people live their life and run their business. When you return to big cities - it leaves with more questions in mind - both philosophically and professionally, scientifically and societally. I saw some of your clips were from Jiangxi province maybe? Hands down some of the places got the best cultural preservations and people are genuine and advanced thinking. Thanks for working on the environmental end and hope you get to a sustainable solution. Being an environmentalist used to be my dream. I am glad like we swabbed countries and may experience each other's life a bit.

I haven't been to Jiangxi yet, most of my videos are taken in Jiangsu and Sichuan, and there were a few done in Henan and Hubei as well. I will be visiting a lot more places after I graduate, I have some week long and month long bike rides planned 😍 🚴♂️

It is overall popular but still with significant dangers on route with the landscape and sometimes weather. Now with more tunnels being built - probably safer but less authentic expereince. For jiangxi - you probably have heard plenty of WuYuan City and Huangshan city - similar to Jiangsu's small towns - with historical significance of prior dwelling of famous people, including that of 胡雪岩,plus the prior chairman who shared the same last name. the touristy ones are 宏村、西递、歙县、官坑、晓起etc, worthwhile just for sightseeing. If you ended up going, can easily picked up other less well known ones along the 古道, which are stone made ancient trade routes connecting many towns together. Environmental wise - i always see people watching dishes/ clothes in the stream, and i always wondered that's their gut microbiom like. Plus plenty of organic dust exposure with tea harvasting etc. 六只脚 is app has many route information for the area. I am sure you will explore plenty of other exciting place.
Fascinating trip, in space and time. Try to imagine a little kid living in this farming village, soon moving into one of those new high-rise apartments, attending a large public school. The kid won't know how far China has transformed itself in the last few decades. BTW: did you find out what is the name of that root you chewed? My guess is it belong to the licorice family.
No idea, just leaving it a mystery until someone recognizes it and says what it is 🤣 I don’t know what licorice looks like in its “natural” form , I think I have only seen it in a candy 😂😂 maybe that’s what it is . Waiting for a Chinese medicine expert opinion haha

Oh! Love it, I lived in Chengdu for one years, I loved to go on bycicle to the contryside, there were so many flowers colors, fragances, and nice people. Great memories.
the old buildings are so nice, i love them too, there are still pockets of these buildings through out China - enjoy! in my mother's village, about 50 houses, 100+ years old and only two old ladies still living there, when they go, it will be an empty village 🤣

I'm actually 1st. Those little ones might be yellowhead catfish. Cooked with tofu it makes great soup, creamy. And if you are also digging into old archetecture dates back 100 years, or more. I'd suggest hiking instead of biking. There are hundreds of abandoned villages in not so deep mountains in Anhui and Zhejiang province. When business's good the villagers left for big cities. Their family houses, little gardens, ancestral temples and sometimes village podiums were left behind, locked and sealed, covered with lichen and ivy. God I miss those hiking days.
@@kats_journey_east It's not like other fresh water fish with lot of tiny intermuscular bones. Fry it on both sides until the skin's yellow or something, you put in water and tofu. Cook until the soup's boiling, trim the fire to minimum and wait for another 10 minutes maybe. The fish meat on the back would go off the spine easily, there's no small bones on the back. Well to be frank I don't cook at all, my daughter's nanny is the one keeps us alive and happy. You might baidu “昂刺鱼豆腐汤" for a legit recipe.
About the hiking, do you have any specific places to recommend? It’s sad that these beautiful places got abandoned but I do love urbex and seeing human architecture get consumed by nature

The trekking routes close to NJ would be like something ends with 古道, like 徽杭古道, 仙霞古道, 西宏古道, 灵山古道, 徽开古道, 栖霞古道. Or 枸杞岛, 东极岛, 南麂岛, 桃花岛 which are islands in Zhejiang, you can take ferryboat from Shanghai, or drive to 沈家门 in Zhejiang then change for ferries.

Unfortunately it’s an issue here too 😔😔 there are still plenty of bees it’s not like you won’t ever see a bee but there is a visible decline , and Chinese bees are also competing with non native bee species which is also a problem
I hate spicy food and I’ve spent over a month worth of time in Chengdu, it’s not that bad 😆 even the wontons in the video look spicy but they really aren’t , the chili sauce just added a lot of color but not much spice

I live in Nanjing but my boyfriend’s brother and parents just moved to Chengdu so we went to visit them for winter break. Wish I could have stayed longer, there’s so much interesting stuff on the outskirts of the city 😆 It’s almost impossible to get into China right now as a non-citizen unless you were already here before the borders shut (I was), hopefully things will get better soon with the vaccine, I miss international travel and it’s weird being basically the only international student at my university 😂

I don’t like spicy food but it actually wasn’t anywhere near as spicy as it looks (thank goodness 🤣) the chili oil was all looks no spice . Hahaha

I live in Nanjing but my boyfriend’s brother and parents just moved to Chengdu so we went to visit them for winter break. Wish I could have stayed longer, there’s so much interesting stuff on the outskirts of the city 😆 It’s almost impossible to get into China right now as a non-citizen unless you were already here before the borders shut (I was), hopefully things will get better soon with the vaccine, I miss international travel and it’s weird being basically the only international student at my university 😂

Canola are rapeseeds which are “genetically modified” with herbicide tolerance systems.
I would not take GMO products.
@@sylvesterfong9275 learn something new every day ! In the US I only ever hear about canola oil, never really heard of rapeseed. Canola oil is a common ingredient in many things. Thanks for the info. It’s too bad rapeseed is such an unpleasant sounding word though 😒 next time guess I’ll just go with “yellow flowers” 😂

In EU, most of the oil and fats consumed comes from rapeseeds / yellow flowers and sunflower seeds.
By the way, soya planted in USA is also a GMO product.
They built massive highway before they build the city.
