We make our own yoghurt here in Syria, and rarely buy it. It's not difficult and can be used without an instant pot. The method you've followed is exactly how we do it. Instead of using instant pot, we cover the pot with a towl and leave it overnight.
And the thing you have gotten by draining the yoghurt is actually not yoghurt, it is called "labneh". We add a bit of salt, dried mint onto it, and olive oil, then devour it with bread. It's served cool and is so refreshing! You may use it as a dipping for chips or veggies (cucumbers go GREAT with it), & it will taste amazing on toasted garlic bead. You can make it lebanese style by adding some minced garlic, dried mint, and black olives, then some oil. Good god it goes well with everything.

Same here, we put the milk into jars and sometimes we leaveit inside the microwave or oven (off mode) instead of covering with towel. We wait for 4 hours and then let cool in the fridge overnight. The less you touch during process the better your yoghurt will be.

We call thick yougert (labneh) in the middle east. we usually have it for breakfast on pita bread with olive oil saprinkle of salt and lots of veggies like 🍅 cucumbers, olives, mint leaves, radishes.
    One of my favorites.
    U did good job Monique

The biggest reason to heat milk to almost boiling before fermenting is that it improves the texture of the yogurt. During fermentation the bacteria consume lactose and produce lactic acid which causes the milk proteins to denature and coagulate trapping most of the fat. I think people need to understand why we heat milk it changes the protein of milk nothing to do with sanitizing. The whey is full of nutrition too. I was visiting a channel who said the reason to heat is to sanitize, not true and she had her comments turned off so I moved on. I am Greek and make thick yogurt all the time. I add (if I have it) a cup of of powdered milk to thicken too and a few teaspoons of sourcream culture from sour cream. It makes it tangy. I never strain it.
If you do save the whey for soups.
Have fun making yogurt. Do not strain it. I make twelve quarts of yogurt every two weeks no failures old school but used the slow cooker no scorching.

I strain it using a colander and lining the inside with regular round coffee filters. The yogurt doesn't stick to the filters very much and it's pretty easy clean up. I've never seen the towel idea before, but it makes a lot of sense, especially if you're trying to reduce waste. Great video! You're so cute.

Hi I just was watching you make your yogurt in the instant pot. I am getting ready to buy myself & my daughter our very first instant pot & have to decide if we want the one with the yogurt setting or not. I already make my own Greek yogurt on the stove which has always turned out so good. I seen how you strained your yogurt & wondered why you didn't use a colander. It works so well & you end up with this thick creamy plain yogurt that is so good & it almost tastes like sour cream, but better. Anyway it doesn't have to be drained if you don't want to drain it. You can eat it before draining but it isn't Greek yogurt until you drain all the whey off of it. I take a clean pan & put a colander on the top of it. Then I take a white tee shirt that I have cut in half & removed the sleeves & place it into the colander & let it overlap the colander & pan. I then put as much yogurt into the colander as it can hold without flowing over. Then I drape the tee shirt over the yogurt & then place aluminum foil over that & let the yogurt sit there for about 8 hours or more until all the whey is drained out of it. There you have your wonderful Greek yogurt & you then can add any flavorings to it that you want. When you drain the whey into the clean pan you can then save the whey in the frig for other uses like making Ricotta cheese or smoothies since it is very healthy for us & our animals. When washing & drying the tee shirt I never put fabric sheets in the dryer with them & I use them only for yogurt making. I think I will get the instant pot with the yogurt setting just to see what the yogurt would taste like, I love it the way I make it but I will try it & see what it is like.

Straining with a flour sack tea towel like you do is absolutely the best way to strain yogurt. I use coffee filters from time to time; similar to the tea towel, it only strains the clear whey, but the towel is the way to go, I would say. Thanks for the video!

When you go onto youtube type in Greek yogurt with the Greek professor & you will come to his youtube video of making Greek yogurt on the stove. Greek yogurt is so expensive to buy & you can make your own Greek yogurt at home for far less than you would have to pay for it at the grocery store. I watched his video & learned how to make it & have been making it for years. I just double his recipe which gives me about 9 quarts of yogurt & then after I drain it I end up with about 4 quarts of Greek yogurt. It is so good too!

Strain it using many layers of cheesecloth or strain it several times through clean cheese cloth. You won’t lose so much of your yogurt through the cheese cloth as you do on the dish cloth! Oh I’ve got to try this recipe one thing I love love love love thick creamy yogurt I eat yogurt every day! Some of my other favorites are homemade eggnog and homemade cheesecake with no gram cracker crust, with the shortbread crust! Yum can’t wait to try this recipe of yours! I don’t have a digital machine like you have so normally I take and cook mine in the pot in a big pot or Dutch oven, And I wrap that pot or Dutch oven with Few towels and a heating pad set on low overnight, then strain it through cheesecloth.Comes out good but Not quite thick enough to my liking. So I’m going to try this recipe and I didn’t know that when you add in some store-bought yogurt that it’s gonna taste like whatever you buy and mix in!

I’ve been making yogurt for years. I bought an extra large men’s white under shirt at Walmart, cut it down to make two almost square cloths, (cut it straight across the arm pits, then cut down each side) drape one piece inside a colander over a larger plastic container to catch the whey. I let drain for about three hours.

Many people use it in cooking. But I freeze the whey and use it as a Water Substitute to make Homemade Soaps.

I strain my yogurt with a metal sieve line with coffee filters. It's works well. I use the way in baking.

You mentioned the things you do with the whey.....can you describe to me a bit more about what you can do with it? I was super intrigued about using it in your hair. Thank you! Great video😊✌️

Hi Monique! If we want the main yogurt to have vanilla flavor at which point would you suggest adding the vanilla? And would you suggest extract or vanilla beans?

Not sure if someone's already mentioned this, but all you need to do for thick, creamy yoghurt is heat the milk just under boiling point, stirring, until it's reduced by about half. I add a little bit of sugar and set for 12hrs. Voilà thick yoghurt. No straining required.

Could I do this with coconut milk? I’m allergic to dairy. What could I use as a starter?

Yes you can. I've seen videos here on TH-cam. Easiest way is to add probiotic (from the capsules) and let it sit

You did a great job as usual but can you add any flavors to it instead of it being plain?

Absolutely! I usually add homemade preserves by simmering fruit in sugar.
