Season then Sous vide with a little beef tallow in the bag at 125 degrees, then into an ice water bath for 20 minutes. Sear to heat back up and get a crust and slice. Drizzle a Soy sauce/brown sugar/ crushed red pepper/ garlic reduction over the sliced breast. Absolute best way to do duck or any game meat!

Hey cole, just bought some 12ga 8 shot from shots ammo and I was wondering if you use these on ducks as well as geese. I’ve seen in your other videos you using them on geese but woundering if you shoot the same load on ducks.
loved the cooking bit, but you had a perfect cast iron pan sitting there and you used a teflon pan with a plastic handle in the oven??? come on rookie....
I would suggest going to a single reed call. I know the double reed works just fine but it’s a matter of style. Full disclosure I’m an Arkansas timber and rice field hunter so take whatever I say for what it’s worth.
I like to leave about 1 inch of skin from near the neck and below the thigh on my duck breasts. Should look like a breast with skin flaps. That way when you put it in the ripping hot pan and the skin shrinks there’s still plenty left to crisp and keep the meat moist. Cris cross scoring helps crisp the skin faster as well. Just my process that I wanted to share if anyone cares. Great video as always and the duck looked amazing too.
Best duck I’ve had and religiously eat we cook it like a stake 3-5 minutes on watch side pull them cube them up set em on a bed of rice them make a brown sugar glaze chop a jalapeño pepper finely and add bacon copped in the glaze then pour it over the duck and rice
