- Good morning everyone and welcome to our life in Mexico. On the rancho today we are making PICO DE GALLO (Authentic Mexican Recipe) for lunch, and we had to save our baby ducks! All a normal day on our homestead in Jalisco Mexico.
Ingredients
5-9 Tomato's
1/2 White Onion
1 Jalapeños
1 Head of Cilantro (chopped)
3-8 Limes
2 cloves garlic
2 tsp Sea Salt
And your favorite bag tostadas

I just found your channel today by accident. It reminds me of the time that I lived in one of the suburbs of Santiago Chile. The simple culture the fresh food everyday and the people were so wonderful. I didn't speak Spanish and they were so kind and understanding. I love your channel you are providing your children with a wonderful life. If it ever gets difficult just remind yourself how good this is for your children
Ohhh p.s ...due to immigration issues my hubby had to go to Juarez but never returned to the U.S. so I moved to Mexicali with him. I work selling second hand items from home but do miss our old life😢 God brought us here for a reason 🙏🏻

That's my fear. My husband is waiting for his appt in Juarez at the consulate. That's my fear is the attorney says it's going to be ok. But they don't know how the appointments go just because everything here gets approved it doesn't mean they will approve it there. So I live with that fear and anxiety daily. I thought they dont do that no more? having to go to Juarez ? my sister in law just got her work permit didnt have to go out there and shes now even flying out to see her daughters shes able to travel now
@@emeraldangellegood morning from what I understand it depends on the situation if you entered the country legally with a passport and over stayed then you don’t have to go to Juarez if you entered illegally witch was my case I had to go to Juarez… praying for everyone going through this that everything goes well… thanks for watching saludos!👋

What a wonderful place to live! By the way, when we had a goat, we'd stake her out fur some time during the day so she could be safe & eat the areas we needed grazed. Maybe that's something you could try. - best wishes from Florida

In LA The neighborhood my mother in law lived in they had an everything truck they sold tortillas vegetables cheese spices it was like a mini store on wheels. She also had the corn cart and the typical ice cream truck that sold soft serve ice cream. I wish that was normal in my neighborhood

When we couldn't afford to buy shrimp or fish, we would add a couple of cans of tuna and made a poor man's version of ceviche. The pico de gallo is basically the base. 😋 Mexican Street corn is the best. Also tejuino during summer time is so dang good. Provecho 💕

Love seeing all the beautiful flowers on your walks! Also, I never tire of seeing the horses or any animals! I love them all! Pico de gallo is my very favorite and after watching this, tomorrow I’m going to make some and get some tostadas and Mexican Cheese! Yum! I also like to make a shrimp ceviche when it’s hot, basically pico de gallo with avocados, lime, oh and crab, then we put some tapatio on it and eat with tostadas!
You can eat the yung mangos with tajin lime and salt you can add spicy if you like too they're yummy 😋😋😋

Do you have people who could get together and clean up the trash? I lived for many years 7 miles from the border in San Diego, and used to bring food for the hungry....I wish they could have a group together to clean up the trash.....My church Calvery Chapel used to build churches in Mexico also. I used to go to Tijuana all the time, Navy for 10 years, and it was sad, women would be sitting on the sidewalk as their children would try to sell gum, and they had soot all over them. I was not allowed to go across the border, but I did, according to Military rules.

Love your channel. I live in Guadalajara, but I seriously think about moving to a rancho all the time. I’ve never added pepino to my pico, I’ll have to try that. I also add chicken powder to mine for extra flavor.

Did you ever make mango yam with those green mangos ? Preserva de mango 💗
You should sharpen your knife before cutting tomatoes so you don’t squish them so much and so you don’t cut yourself when cutting the jalapenos . If you don’t have a sharpener you can use the bottom of a ceramic coffee mug.

I love Mexican clay pots but I’m always weary of buying them because of the potential for lead. Is it common for people in Mexico to use the lead tests to check for lead in/on clay pots? I’m wondering if people will think I’m rude if I bust out a lead testing kit if I buy one 🤭😂… I don’t want to be offensive to anyone.

Hello good morning! To answer your question we don’t have any of those near us they would in the surrounding bigger towns like Ocotlan -Atotonilco - la Barca the only thing available in our small town is a small clinic and a even smaller pharmacy. Thanks for watching saludos 👋
