Recipe: Ingredients: Dressing: 85ml extra virgin olive oil (garlic infused olive oil works too) 50ml red wine vinegar 2 tsp oregano 2 tsp lemon juice 1 tsp dijon mustard 1 tsp sugar or honey (optional) pinch of salt and pepper 150g cherry tomatoes, halved 100g olives, halved 150g feta, small cubes 1 green pepper, chopped 100g cucumber, chopped 250g gluten free orzo Method: Whisk everything together for the dressing. Place the prepared tomatoes, olives, feta, green pepper and cucumber into a bowl and pour the dressing over it and mix. Put to one side whilst you cook the gluten free orzo. Cook the gluten free orzo in boiling water for about 11 minutes or until cooked (or follow packet instructions). Once cooked, drain and rinse in cold water to cool it down. Stir the gluten free orzo into the salad to combine and serve up.
I do something similar but without the cucumber. Instead I grill the bell peppers and some zucchini with garlic and tomato paste and let it cool. So delicious with the orzo, feta, olives and tomatoes!

Salad but we removed the salad part
