I lived in Greece for 13 years & never had a kidney bean salad in any taverna. I made them myself though. I had lots of other delicious salads instead. Damn yummy.
This is a very tasty salad, you could do many variations of it... for example replace kidney beans with chickpeas...replace sumac in the dressing with cumin... try it with parsley instead of cilantro ... you can also add bell peppers...
i m from the Med coast. sumac goes best with onion or red cabbage salads, but you cannot just stir it in, it really needs to melt (even soak it in water couple min before hand) Also, mustard does not really belong in Med dishes. we most of the time use a great olive oil, minced garlic and pure lemon juice for dressings. i'd also use spring onions, vine tomatoes and Persian cuke instead. and of course fresh basil as we use mint with yogurt based sauces and meals. this salad looks good but it s more fusion than Mediterranean.

The two mustards are different as far as flavor. Dijon mustard is the one you want in this recipe, for sure!

Have you tried Italian parsley? It’s softer, flatter and doesn’t have as much texture as crunchier kind
You will have to be very careful with the amount of cilantro you add as cilantro has a very dominant taste versus the very sub taste of beans

Hi, Tory. This recipe only calls for a conservative amount of olive oil. If it's too much for your taste, you can reduce, of course.
