Crawfish are available from January to the end of March. And they're grown on a farm.
When talking about touring the southern US, keep in mind just how BIG the US actually is, the driving distance between Austin, Texas and New Orleans, Louisiana is over 500 miles even through they are in neighboring states. This is only slightly less than the driving distance from London to Inverness
Yeah that's pretty crazy, the scale of things is definitely bigger than we realised. I guess with a few hotel breaks and a whole bunch of driving we could make a little road trip out of it. :)

Decades ago, at an oyster ranch North of San Francisco, we were eating huge raw oysters. Not my favorite, I prefer them small and smoked out of a can, in oil. Anyway, best part was, there was a tiny live crab, running around my mother's plate, hiding behind the oyster shells, crying "Don't eat me!". ;-)

Oysters do take on the flavor of their environs. As such, New Orleans and Louisiana oysters are quite organic plant / sea salt very herbal and a tame fish taste. They do filter the water around them....hence the name "oyster" ,...."around" and when they make round, pearls all the better❤❤
What kills me the most of about their video is that you aren’t suppose to inhale the juice. You are suppose to drink it.
I was never a Lobster eater so I was wary of crawfish - I couldn't have been more wrong, once I learned how to eat the damn thing/head removal/suck, etc., I realized I should never judge a book by its cover, or a shellfish by its shell! To say a crawfish boil is delicious would be the understatement of the century. Those little "suckers" are so damn delicious, I understand why our Cajun neighbors boil up thousands of them! Don't be afraid my British friends--DIVE IN HEAD 1ST! You will LOVE them little critters.

Great reaction. Jolly did a BBQ in Louisiana as well. There was some different things they ate in that one than the one they had in Texas. You should look at it too. Love your channel thank you.

If you go to Texas for BBQ, Louisiana is the neighboring state so you need to do both while you are in the area.
Crawfish are fresh water and are seasonal but there are " farms " that supply crawfish restaurants all year around. Sounds like you guys had raw oysters these where grilled with cheese so sliminess is gone but there are many ways them. Oysters Rockefeller are baked and are great also. Most people I know eat raw oysters with crackers, horseradish and Tabasco sauce.

Crawfish or Crayfish are the lobster of fresh water streams! lol They are very good!
I LOVE oysters on the half shell - BUT they must be very cold - and from the east coast (Atlantic) if possible and you have to put a splash of hot sauce! And the down the hatch! I have had them like these guys are eating them also - which is absolutely delicious! I guess I just like oysters . . my daughter gets mad if I don't make scalloped oysters for Thanksgiving AND Christmas! LOL I'm like you all - any type of shell fish!! Although I do like fish in general too - nothing like a fried catfish or blackened salmon or grilled trout or a wonderful sea bass! YUM (Cod is considered just for battering here for fish & chips only basically....) I think you all would like "fish" if you tried all the different types there are!

I've never tried catfish but I'm quite curious as to how it tastes. Salmon and sea bass are big favourites for us, generally if we ever buy fish it's either of those.

Some areas of the US also call them crayfish, or use the terms crawfish and crayfish interchangeably. They are crustaceans who inhabit creeks and rivers.

Crawfish is in the lobster family,except it is smaller. I am from Louisiana and crawfish is wonderful to eat. it is spicey. Louisiana is know for its seafood.
10 lbs of crawfish makes 1 lbs of meat. I usually eat about 20 lbs of crawfish.

I can't eat raw oysters. Like you said, too slimy. BUT, do an oyster Rockefeller and I could eat them forever.
I've never tried anything but raw oysters and it did kind of put me off.. but, I would be open to trying the cooked oysters.

You'd be right at home if you like shellfish,... We eat them with everything....rice, noodles, eggs, grits, French bread dressed (in New Orleans that's mayonnaise, lettuce, tomato and pickles ....you gotta ask for extra shit, I say extra more like lagniappe, they won't charge you for extra pickle, hot sauce, tomato, if you polite langniappe would be an extra throw of shrimp on ya poboy or more beef on your roast beef debris poboy....even better 5 more Xtra shrimp on ya "All dat Jazz" poboy at the Verti Marte. Way off track....I'm gonna have to catch da streetcar transfer to yes the streetcar Desire on Rampart Street, then I can walk to the Verti Marte.....thanks for the idea,❤❤❤
Crawfish season in Louisiana runs from about January through the first part of June most years. I think Jolly filmed this in mid December, so very early for crawfish season.

With oysters, there are different qualities/textures, and different ways they are presented whether raw/steamed/fried/ etc. I hated them until my client, who is a three-star Michelin chef, showed me the differences. Also, 42 pounds of crawfish sounds like a lot, but it equals less than 7 pounds of meat.
Wow, must be some chef! I can't imagine eating food of that calibre. Ah so once the shells are removed it's actually a lot less than expected although 7 pounds is still a solid amount.

Most crawfish that you get at restaurants is farm raised.

I will tell you this from a true New Orleans perspective... crawfish as I know, are crayfish in hoite toite non tasting places. You wouldn't necessarily want haggis from Louisiana, although we just call it boudin. Non, non, non food compares to New Orleans Creole, Canary Isleño, African, French and Louisane Cajun, country French, ... c'est trop beau pour le laisser passer❤ 🇫🇷🇺🇸
