    OMG!!! I made this recepie. I was kinda skeptical at first, but i tried it, granted, i didn't have carrots, so i used quarted tomatoes and i substituted the praprika for fennel seeds. I cooked it just till the temperature reached 145 - 150 degree and it came out soooooo delicious!!! and so tender and juicy. For some reason the apple juice added a well balanced flavor and made the tomatoes and onions sweet and so rich. it was really, really good.

Had to tweak it a bit on timing as I used a leaner, smaller roast that I already had but none the less it was tender and delicious and so were the veggies. Yummo. I didn’t have a sprig of fresh rosemary so I just used a little dried and it was fine. Thank you so much for the delicious recipe. Next time I will try the Honey Dijon pork loin roast. x

    Made this already once based off this recipe, made up my own seasoning mix with what I had. Onion powder, garlic powder, lemon pepper, regular pepper and some sugar.
    Anyway, first time I did it exactly like she showed. Taste was amazing but I feel like leaving the top off the whole time really dried out the pork roast.
    Cooking it again literally right now. I'm adjusting cooking time a bit, roast is like 2.75lbs. And keeping the top on throughout. AND using more apple juice than originally. Let's see how this works in regards to moisture level.

    A bit of advice for people who don't often use pork butts/shoulders/picnic roasts: don't cook it to "fall off the bone" tender if what you want is a roast. That consistency is great for pulled pork, but my humble opinion is that a Sunday roast should be more firm and have a bit more chew to it.. For me, between 145F (63C) and 165F (74C) is ideal for this in a roast pork butt, whereas you'd take it to 195F (91C) or beyond for pulled pork. (Also, buy a probe thermometer--it is worth the $15!)

    Enjoyed the video and recipe. Details are very important. That is similar to the way my southern heritage would cook. Never thought of using apple juice. But why not, pork is often served with apple or grilled with applewood.

    Hey Chef.
    I was impressed that you didn't put the top on your Dutch oven.
    I'm assuming that's the better way to do it, right?

    • @Thestayathomechef
      @Thestayathomechef  2 ปีที่แล้ว

      Yes, with this particular cut of pork, I find that roasting is a better option than braising.
