Homemade Corn Chips (frito style)

  • In this video I demonstrate how I make corn chips. These are similar to the popular brand name corn chip “Fritos”. They are very simple to make with just a few ingredients. They make a good side dish for sandwiches or a topping for a bowl of chili, or just for snacking on during a televised sporting event or a good movie.

    Just 3 simple ingredients:
    Corn meal : 1 cup
    table salt : 1 teaspoon (or to preference)
    Really hot water not boiling: (about approximately a couple of ounces almost, kind of, sort of, nearly just enough)
    You’ll also need oil for frying them, Since they are corn chips why not use corn oil? However any oil will work, peanut, canola, soy whatever!
    Disclaimer: Because you make these yourself, you have the option to fry these to whatever ever level of crispness that you want. It may take a little practice and patience to get them to close to the commercial brand name chip level of crispness . You can fry them soft like corn bread or as hard as a piece ceramic.     Since I don't have a jerky gun, I will probably roll the batter out on parchment paper (maybe between two sheets, or wax paper) and then slice them into rectangles. It should work just as well. Thank you, awesome video!

      The Grumpy Ol' Gringo Sr. They are extremely easy the trick is the hot water. If the water is cold the cornmeal doesn’t form the right consistency of pastiness. And you need a way to squirt them into the hot grease. A cake decorating nozzle thing would likely work if you don’t have a jerky gun.

      Smokin’ Jazz Bbq Great minds and all! Make sure the water is hot, not boiling but very hot or the corn meal won’t form the right paste consistency. It is just kind of grainy and doesn’t form shapes with cold water.

    Every time I went to work, I always stop at seven 7⃣ eleven to buy their chilli cheese fritos.to take for my lunch. 😊one bag was never enough. ❤I always bought a extra bag when I was going home. and my second favorite is BBQ corn chips.and last my favorite potato chips are lays Ruffles. ❤❤nothing says a picknick like chips and a good juicy hamburger with everything on it.on a summer day. and a cold drink. 😊❤❤

    My favorite is the Fritos corn chips in spicy jalapeno YUM .. Yes that turkey sandwich would be excellent with Fritos spicy jalapeno. Matter of fact i smoked cooked, a butter, garlic, salt, jalapeno turkey YUM ~ The Favor of the 2, is out of this world YUM 😉👍

      THEREALSHOWBBQ Add what ever seasoning you want to them. I’m not sure I would add them to the mix though. Just sprinkle on after they are cooked fresh out of the hot oil.

    Thank you sir! i am addicted to corn chips that they have at the dollar store and I am trying to diet and incorporate them into my diet. I appreciate the recipe and will try it but will spray them with oil and roast in the air fryer for a healthier version.... I don't have a jerky gun so i will make a log and slice it thin to get the shape.... can't wait to see how it turns out! Easy recipe!

      Always Bolt the Bird I tried an air fryer with mediocre results. They were better fried in oil.

      Always Bolt the Bird Well maybe if you squeeze them into the air basket, then chill the basket with the uncooked chips in the fridge for a while then cook them in the air fryer on high. I don’t know maybe that will work. When I tried it, the corn meal past sort of seeped though the holes in the bottom of the basket and molded them selves to it. Also, they weren’t as crispy. And they fell apart when I tried to release them because they were stuck to and through the basket. I also think that I should have preheated the basket. Then maybe when I squirt them in to the basket the bottom side of the chip will immediately start to sear and not ooze through the basket holes.
      I’m not saying you shouldn’t give them a try in the air fryer, I’m just letting you know I wasn’t real successful with it. They were not as crispy, they were crumbled in to small bits because they were stuck to the basket, yet they still tasted good, just not the same real crispy texture. The air fryer isn’t all to blame for my bad results with the corn chips in it. Operator error is also a contributing factor.

    What if we tried some thing difference . like pencil style corn chips, or even my pillow style! They don't have to be flat and hard to eat. like Fritos I do like the potato chip crunch better, and is more pleasant to eat ! The way i made my pillow style is lay saran wrap out spread the past out, sprinkle some dry masa out on the past b4 you roll them out. about 2/8" thick cut them with a pizza roller the size you want. lift them off the saran wrap with a knife while you unpeel the saran wrap under them. You want little brown pillows They will puff up in the hot oil YUM

    Have you tried baking the corn chips? If so at what temperature for how long?

      Margaret Larmay I’m sorry I haven’t tried baking them. I was trying to imitate Fritos brand corn chips. As you may know “Fritos” is Spanish did “little fried things” therefore I haven’t attempted to bake them. They may work in an air fryer.

      @@BigLewBBQ They do look like Fritos brand corn chips. I love corn chips but can't eat them because of the salt. Will use kosher salt and try frying them. Just curious if they will be as good baking them. Maybe I'll try making them both ways. Slowly getting back to making food from scratch. Thanks for the recipe. 😊

    I would think to put tin foil on a flat sheet with a think layer of the oil and place the chips on the sheet and put in the oven
