I'm not a fan of gamey taste, other unfamiliar parts of animals and innards, but tried any meat once and sometimes surprise that I like it e.g. sisig. For instance, I didn't mind the Scottish haggis as long as it's the spicy type because it had more flavour.

I’ve been in US over 52 yrs and know what & tasted bopis. Bopis is kapangpangan and made with annatto oil for coloring. For us bicolano is called kandingga but made with coconut milk, no annatto but made the same with chilies.
to be honest, hindi naman sya sikat in a good way.. natural lang na kilala kasi mejo kakaiba.. tulad ng dinuguan, madami ang may ayaw sa kanila.. compared to others like caldereta, menudo, afritada, etc.. lahat ng uri ng tao kinakaen yan.. so ano ba definition mo ng sikat? sikat as in popular (in a good way) or sikat (as in kilala in a negative way tulad ng dinuguan, balut, paksiw, etc.)
