- In today's review video, Mr. Cast Iron discusses how to choose the right size skillet for various meals or whatever you may be cooking. We display several skillets from Lodge and a BSR (Birmingham Stove and Range) cornbread skillet. I show my 3 notch Lodge pan that we cook steak in quite often too. If you are looking to buy a skillet for the first time, we offer some suggestions that I hope will help your buying decisions.

If you're a single person, no.s 3, 5 and 8 are about the right size for everything. I can cook 4 sausage links in a no. 3, a box of Jiffy cornbread in a no. 5, and bacon or eggs or the new Lodge cornbreads in a no. 8. Except for say the Lodge Blacklock and vintage Wagner etc., I don't really like the weight of the 12" and bigger skillets (old fingers starting to get stiffer!).
Yeah, the older we get, the harder it gets to handle some of the heavier skillets. Thanks for sharing your thoughts and suggestions with us, my friend!! I wish I had some cornbread now, lol!!
My favorite skillet is the wagoner that i have that is split into 3 spaces. Two for the eggs and one for the bacon. I Love that piece. Nice job Mike.

i have a 15inch skillet, a 6 quart oval dutch oven, 14 inch wok, 4 loaf pans, 2 casserole pans and 2 cornbread pans in my cast iron collection so far and i love them all

Nice overview Mike. Of the dozen or so pieces I own, I find myself reaching for my 3 notch 10.5" the most. It's the perfect size for the wife and I. I love that skillet.

I chose 12" skillets for my purchase because space is an issue for me. I am largely a carnivore, so I wanted a pan that can handle a whole beef chuck roast at once. My cast iron is made by Victoria in Colombia. Honestly, it doesn't get much use since I bought a steel pan from Solidteknics USA (made in Chicago). It does an even better job of searing than the cast iron, and it heats up and cools down faster.

Hard for me to pick a favorite, but about 25 years ago I bought a 22" skillet from Cabela's to feed people at deer camp. Fits perfectly on a Weber kettle grill! I don't think they make it anymore. Now I'm just an old dude all by myself and don't need it. But I just can't part with it.
Oh, I don’t think I could either. I almost bought a 20 like a lot of hotels used but I passed on because I don’t have enough room now for all I’ve got LOL!
Most of my life a cast iron skillet was a #8. Most of the skillets I've seen and most of the skillets I have are #8s. It's what I use most though I also use #10, #7, #6, #5 and #3. Lately, I've been liking a #6, 9 inch and recently added a Wagner Ware to the Griswold I've had for years. I think it's a good idea to have a skillet big enough that what you're cooking isn't crowded, it just works better. I think the most important skill to have in cooking with cast iron is getting the right temperature and if you're chicken frying something; floured, seasoned and extra grease, it's really makes a difference. My mom called it a slow boil and if you take the time to do that and turn the heat down at the end with a cover on, it makes the best fried meat in my opinion.
P.S. Your irons are soooooo beautiful. Luv her Pioneer. Mine getting there. I'll get to cook more in it now bc it's our Winter months. Holidays & company is a good time of yr for rotating. Luvvvv it Mrs. C.I.

The older we get, the better off we are to use the KISS method. Keep It Simple Stupid process. Pick the 1, or 2, or 3
pieces that can do it all. It sounds like overkill, but you can fry 2 eggs in a 12" skillet, or a grilled cheese sandwich,
and most anything else. Can't cook a ribeye, a corn bread, in a 5,or 7" skillet. I understand use the right tool for the
right job, but I also know the bottom line is, 2-3 sunny side up eggs and a medium rare, bone in ribeye please.
You have a fantastic collection there just the same. If I was younger, maybe, but for now, less is more.

Mike Christmas is coming so let me tell ya how to save some money on nice gifts. This is what I did last year with my brothers-in-law. I bought three BSR cornbread skillets unrestored for $20ish each. I restored and seasoned them and my wife added the story behind the skillet. A nice cheap gift that everyone can't find worth $70ish when it's restored. Here's the story.
In 1967, a BS&R foundry foreman named Billy Washburn began coming into the foundry on weekends to make a cast-iron piece for his wife. She wanted a cornbread skillet that would make cornbread crispy on all sides. With the help of personnel manager Mike Bryan, he came up with the BS&R cornbread skillet, a 9-inch skillet divided into 8 wedges. (BS&R also made a 6½ -inch version with 6 wedges.) The cornbread skillet was initially produced with a PAT. PENDING ("patent pending") mark, and not a MADE IN USA mark. This was done in an attempt to prevent other companies from producing their own imitation versions of this pan; though the attempt was unsuccessful. With the new Disamatic molding machines in place, the company could turn out hundreds of cornbread skillets in one day. Priced at just $1.19, the skillet earned the nickname, “The Million-Dollar Skillet,” when it sold more than 500,000 pieces the first year and again the second year, making more than $1 million for BS&R.

Yeah, check yard sales, thrift stores, and pawn shops. You never know what you might find!
Lodge makes 3-1/2 inch and 5 inch skillets, and both are on Amazon as of this morning. The 5 inch is similar in size to a #2. I recently bought my 5 inch Lodge on Home Depot's website, less than $10 including shipping to my local store.
