The blue film is called a leader. Its purpose is for staring the film onto the 'take-up' reel and avoids damaging the original film that starts viewing after a bit. These leaders are used on all movie film sizes back then. You can even splice a leader onto a film if it needs one.
One of those buttons that you don't know about I believe has the label "Mark". It is used for editing your film. If you press on the button it will score the film and leave a mark. Then when you place it on the splicer you will know exactly where to splice the film because you can see the mark on the film.

Why would you make your video "instructional" with the 8mm Baia sitting on your unmade bed? Couldn't you setup on a table making a little more professional?

I think the switches to the left are focus aids. I have a 120 model. It has knobs, and that's the set up with it.
