Hey Dan, came across your story, the class and the race this morning, looks interesting, I will be watching from NZ. I see for the race, you are not allowed a desalinator, how do you handle drinking water, do you have to carry everything you will need?
For the Transat they have to carry all water with them. There's a minimum amount of water required by class rules, and of course they suggest carrying more than required. They can take a manual desalinator with them but it must be sealed for emergency purposes only. Remaining sealed is checked at the end of the race. For the MGR (global race) I'm not entirely sure what those rules are yet for water. The idea of carrying nearly a year's worth of water seems impractical and very hard to estimate due to a million variables. I can't imagine the class organization wants to take on the liability (to image, reputation, racer's lives, etc) of a miscalculated mandate. My guess would be leaving water up to the racer's discretion, but with the same desalinator rules as the Transat. So you at least pack up a required minimum amount for the leg of the race and purchase more at port between legs, or you pack up enough for multiple legs. The choice is the racer's as long as you have the minimum at the start of a leg.

Hi! The main hatch is 60cm x 60cm. Inner bulkead 70 x 70 & deck hatch is 50 x 50 I think from memory
