  • Ampesi is one of the main classic dish in Ghana especially among the Ashanti’s. This can made with either plantain, coco yam, or yam. It is very nutritious and goes so well with a simple cooked vegetables grinded in the almighty Apotoyiwa (earthen bowl)
    I always go for the plantain with grinded spinach( taro leaves) kontomire it is just so delicious. I really hope you give this a try

    400g fresh spinach
    2kg fresh plantain
    2 fresh tomatoes
    6-7 kpakpo shito (green Pettit peppers)
    2 medium size onions (red & white)
    A handful of Turkey berries
    A tbs of peanut butter
    A piece of momone (cured fish)
    Palm oil
    ~~ proteins
    4 medium size Eggs
    Cured dried salted tilapia (koobi)
    ~~garnish
    2 medium size avocado

    When I think people tell us boiled plantain and egg eaten together is deadly 😩 and that it has been a cultural meal for ages without any problem.
    It's amazing the quantity of false stuff we hear

    Wow Sis I wish I was having this for dinner 😋😋 looks soo Scrumptious and finger licking even my mouth is watering already. Guy's please don't eat any fruits or desserts for 3hours after this food or you will spoil the taste in your mouth and only wipe your fingers as you need to keep smelling that beautiful aroma every now and then.     Was the koobi soaking in water? If so for how long before boiling with the plantain?

      Hello @Kim, while waiting for Lovia, this is my tip.
      Even before you use your new asanka, use an iron sponge and water to wash/ scrape it thoroughly until the water runs clear. Initially, you'll see a lot of the pot's colour i.e, black of it's the black one, or red if it's the red one. As you continue to wash and pour out, it'll be clear. Then finally, use your regular soap and sponge to wash everything off and rinse. You're done.
      You can occasionally put the asanka on the stove with water in it. Also, you can turn it upside down on the stove.
      It makes it last longer. Hope this helps. Thank you.
