The most realistic headcanon for Harry and Hermione would be based in the HPmovieverse when Ron left/broke up with Hermione in the woods. Leaving Harry and Hermione alone together. On the night Harry and Hermione dance they started making out which leads to them sleeping with each other that night(movie just cut it out to keep it PG) Afterwards they feel bad/guilty about what they've done because of Ron and agree to move on and not say a word of it to Ron even though neither one of them cheated(Ron broke up with Hermione and Harry broke up with Ginny due to the danger). Ron was suspicious that they mightve hooked up but never does say anything about it (his face and reaction to Harry while Hermione cries and hugs Harry before Harry sets off to let Voldy kill him says it all). They just have a slight quiet disconnect with the trio never quite being the whole same ever again. Hermione eventually does tell Ron what happened later on when he and Harry are both Aurors which prompts Ron to quit being an Auror and help George with Wizarding Wheezes. Ron and Hermione stay together after this revelation but seek marriage counseling, Harry and Ginny also have a hiccup due to it as well but stay together and eventually move past it tho Ginny does throw it in Harry's face from time to time when they get in spats. Ron and Harry's friendship is quietly strained but they do remain friends especially since Harry is Ron's brother in law.
