Mickey's Fun Wheel and Space Traders are good ones to enchant as they help drop the shared common tokens that the characters need for leveling up. Specifically: Mickey and Friends Balloon, Pixar Ball, Pumpkin Carriage, Pixie Dust, Plant Life, Pirate Flag, Scream Canister, Flag of Carona, Spinning Wheel and Pawpsicle.
Important: it's not worth it to spend elixers just to find chests. It's SO expensive (400 elixers)... I think it's better to search for them yourself, they're not hard to find! And, save elixers for attractions and character scrolls and other important stuff.

I have to agree with Daniel Guizar (he gives great and clear advices) that you should focus on getting Donald's Boat to level 3 (Michael Darling's Ears Hat) and Minnie's House to level 4 (John Darling's Umbrella Token) for now. I would highly recommend you to go to the following website: dmktokenguide.com and register to that site. You can keep track of all your character levels, building levels etc. You can see an overview there what level of enchantment a building needs to be to collect a certain token (not every token is available yet I believe), it's really worth it to take a look there. For every player it depants on where there at in the storyline. If you need anymore information, please let me know! Have a great day!
Since you are the king of concessions you could open some concession chests it’s a guaranteed concession for 60 gems. There’s new really cool concessions like a poptart stand and stuff
Try getting the Lilo and Stitch characters when you see them in Legendary Chest. I really you should check Merlin's Shop for new attractions like Toy Story Mania. Work on Jack Sparrow's Captain coat in the costume shop

Open some land and maybe redo your your park in a video. Its been awhile and they totally revamped space mountain area so you can fit more. Plus put away any attractions that dont drop tokens so you have more room . Congrats on getting the Nemo charcters cant wait for you to get the rest of the charcters (: check out the costumes there a bunch now .

The rides are necessary to progress some character missions so it is good to go for the rides in the chests as well

All the attractions should be enchanted to 4 then 5. Reward 5 gives you 50% chance to get 2 tokens
