Mangalore southe or Mangalore cucumbar sambar is a very popular sambar recipe in Mangalore, Udupi, and Malnad region of Karnataka. This type of sambar is prepared by yellow cucumber or sambar cucumber, along with freshly roasted spices and grated coconut. In most of the mangalore, Udupi and malnad region temples, they usually serve these type of sambar. This mangloer cucumber sambar goes well with rice with a spoonful of ghee, along with jack fruit papad and mango pickle. It is so easy to make and tastes pretty good.
