    So I just made this, and I have to say it was amazing! Meat was literally “melt in your mouth.” Only suggestion I have is to add more beef broth and more wine. My sauce practically reduced to almost nothing. Grill temp came back up to 350 pretty easily, and I only let it cook for two more hours. John is the man!

    John-bought a Kamado Joe "Big Joe" last week and did my first cook with the Dutch Oven Pt Roast. Outstanding!! Loved it. I have enjoyed your videos. They have really helped familiarize me with the Kamado Joe and Kamado cooking. I'm a convert from a gas grill.

    Thats my kinda food - meat, potatoes and veg all cooked perfectly - doesn't get much better - good job! Would it be worth taking the dutch oven off & putting the carrots & potatoes on the grill while it's getting up to 350 to get a bit of caramelizing / colour going before adding them to the pot?

    Great looking recipe. If you don't drink wine what other liquid can you use? I have a brand new dutch oven and want to use it, so this recipe looks like the one to do.

    Great cook, kinda off topic question, I have a big joe but have been thinking about getting a classic for more fuel economy, is there much difference in fuel usage between the two?

    I tried this yesterday, was careful to keep it right at 225 for the first 2h, and up to just under 350. Mine was boiling pretty good with the lid on, and ended up feeling about right at 1h in (coverd), I chickened out and let it go another 20-25 min and the veggies were really good, but the roast was dried out. I am using the sloroller, should I have just trusted my instinct on the first toothpick test? I think next time I'll go a tad lower on the covered part. Was your liquid boiling, John? Maybe I should have factored the time it took to get to 350? I may have started my second 2h timer once I hit 350. . .

      Just tried this. Amazing. I had a hard time getting the Joe to 350. Not sure why. But the results are amazing.

      The Kamado is an art form. It takes some practice and patience. The worst thing you can do is over shoot the temp.

    This turned out great. I'd make sure you cut onions thick for bottom layer. Maybe even add a third onion. Also make sure you have enough liquid in here.

    Make it 2 cups of wine, double the broth, a can of cream of mushroom soup, and some olive oil. Cook until the meat falls apart with gentle probing. Then you've got something.
