  • All over Italy, you find brioche mixed with sweet things. Brioche con Gelato, Granita e Gelato, Marizotti. And as an Ice cream sandwich lover, I took what Italy gave us and put my little American spin on it. The result is the greatest ice cream sandwich I’ve ever had.

    Made this over the weekend, except with oreo ice cream (my personal fave). It's a whole new ice cream delivery system. It's like eating an ice cream cone but you're getting the texture of the waffle cone the entire way through (as opposed to just the end).
    I was worried the brioche bun wouldn't have any structural integrity and the sandwich would be all sorts of falling apart, but the toasting step really helped in drying it out and hardening it to a point where things aren't getting smooshy.

    One of my absolute favorite memories of childhood is visiting my mom in the westerlands of Norway (Vestlandet), and having her buy me and my sister ice cream, dipped in crunchy chocolate fudge. This video sent me back literally two decades, to a simple and wonderful time. Thank you for this, and for all the many hours of lectures you have provided.

    You can easily make homemade magic shell with 1 cup semisweet chocolate chips melted with 3 tablespoons coconut oil. Serves about 4. This is a genius idea! Thank you!

    Ah, that mushy ice cream/bread hit is a joy, experienced it a few weeks back in a restaurant. Can’t think why I’ve never made it myself before now I’ve watched this as can get brioche and have plenty ice cream and it’s certainly easy and have no excuse and dammit it’s as good as done.     These are delicious! Shoutout to my brothers and sisters in Singapore, where street vendors sell these out of carts, using thick, soft bread, similar to slices of "Hokkaido milk bread". Along with the traditional vanilla, choc-chip, mint choc-chip, you have local favourites such as mango, green tea, pandan, purple taro, and durian!. They even have different flavours of bread, such as fancy rainbow-unicorn! Do try one if ever you're there!

    This is similar to what I ate last night at Novel Ice Cream in downtown Phoenix. They use a donut instead of brioche, and the crunch was cinnamon toast crunch cereal. I'll have to try this too!

      @@g.p7640 The place is called Novel Ice Cream on Roosevelt. I don't remember what I ordered, but they said it was their most popular order. There's a lot of options though.

    The fat kid in me has been making ice cream sandwiches for years using frozen homestyle eggo waffles and whatever ice cream I have on hand, usually butter pecan or more recently HEB's sopapilla ice cream which is just... the best thing, a cinnamon ice cream with honey and sopapilla bits I love it!

    They make these in Epcot they have a specialty press machine that seals the ice cream and topping in the brioche bun so its warm on the outside and still frozen on the inside. Its a must every trip for me they call it a Croque Glace'.

    This looks bangin! The only thing that would be an upgrade instead of toasting the brioche in the toaster oven I would butter the cut sides and fry them in a pan till crisp!

    Ive done my own variation on this, but used Nutella, waffer, walnuts and almond fingers. I then did some AB testing and substituted the Nutella for biscoff spread. I think next I'll try one with biscoff spread, bannana, walnuts and crumbled arrowroot biscuits. A sort of banoffee pie ice cream sandwich

    I like Pizzelles (the thin version, not the thick) if you want the texture of the "waffle cone" with more flavours available. I would also love to use my favourite HD flavour Dulce de Leche. Brilliant twist using brioche btw. It's been too long since I've been to Italy, I miss the good gelato. Enjoy your visit and thanks for another terrific post.

      I tried Pizzelles, I thought they'd be great too, I found the didn't give as good of a texture as the waffle cone.

    Crispy is the popping of the thin shell around many tiny air pockets. Crunchy is the noisy cracking of the substance itself. And they are not mutually exclusive. Kettle cooked potato chips for example start crunchy and then go crispy as all the large material surfaces have been broken and the smaller air pockets can now be heard. Some things remain crunchy, like Ice, hard candy, and peanut brittle.
    Crispy requires air, Crunchy does not.

    My take on crisp vs crunch has nothing to do with sounds, but with density. Crispy things are light and airy/porous. Crunchy things are dense and more solid by comparison, making them a bit harder to bite through

    I love it, a simple elevated treat thrown together when you're with friends or stoned. Not everything has to be a painstakingly constructed from scratch ouvre defining endeavour. Much like how real Italians would, I lived with them and they are a lot less snooty than most non-Italians assume.

    Yeah, I worked for Whole Foods for years. They don't bake those Brioche Buns fresh. They don't even have the equipment in the stores to package it like that. LOL Those are very good buns though. I simply will not eat a burger without them.

    I've been eating icecream sandwiches made with bread my whole life I didn't even try a cookie icecream sandwiches until I was at least 17yrs old, and bread icecream sandwiches are still my preference although I've never it with brioche before let alone toasted fancy
